I pack my husband a cooler every day. His favorite is the vegetarian turkey substitute - either LightLife or Tofurkey. Each slice is very low calories. I put Nayonnaise on 1 side of rye bread and mustard on the other. I also add cheese, lettuce and pickle sandwich toppers. I also pack some baby carrots, fruit - plum, grapes, whatever is in season and some pretzels. I've never been a sandwich eater so I put some refried beans in a tortilla with some mushrooms and shredded carrots for my lunch. Or peanut butter on a whole wheat pita. Nice and easy. Good luck.
