Hi,
The yamaha xg synths let you use channels 9 and 10 for drums. You might be able to use other channels if the synth you're using allows it. But most don't, and those that do are very specific. QWS can do it but most synths will only register channel 10 as drums and use the instruments that correspond to the drum kits on the other channels. Maybe i'm missing something though, and there is a more hopeful answer? I really don't play around with that too much, I just stick to the standard because it works, unless i'm doing something for a specific synth. Then all midi rules basically go out the window. It's nice to have that freedom, but as we all know, with everyone else's equipment that midi is going to sound about as good as something being thrown through a window, in this case general midi standards!
