It's pretty simple -- touch screens allow the controls to be done in software, which means less product cost with how ubiquitous touch screens have gotten. Knobs and buttons cost money to create, even if they're just surface panel controls instead of actual mechanisms. Synthesizer and other keyboard manufacturers have not indicated much interest in what end users want beyond the ability to create sounds, or at least play them back, for decades now. The ones who really try to meet customer needs and desires tend to be a bit more expensive, while the lower end of the market is rife with instruments that make the user accommodate the instrument instead of the instrument accommodating the user. (Nord, Hammond/Suzuki, Kurzweil, and a few others are bucking this trend, but they aren't cheap to buy) I suspect this is one of the reasons why things are moving toward software instruments.
