The RAW data should be unchanged as, by definition, it is the RAW data 
collected from the sensor. Possibly the embedded preview are B&W (that's 
seems logical, but I wouldn't bet that they all are). And if you shoot 
JPEG, they don't have color, even in RAW+JPEG.

That's a question left to the camera manufacturer or your own testing.

Basically to have a B&W image you can just remove the chorminance 
information. But then you can also choose to use color filter and make a 
color more important than the other in term of luminance (like using 
colored filter when printing from film in a dark room).

And that's the detail that may be specific to a camera or even its 
internal settings.
