I ride both a 54 SM and a 57 Roadeo.  I have nearly the same PBH and SH as you. 
 You can drop the bars about 2 inches below your saddle if that's where you 
want them, maybe a little less on the SM due to the relatively long/high HT.  
The sky is the limit as far height above the saddle using a Tallux stem.  Both 
of my bikes are set up with identical cockpits with my saddle level with the 
bars.  I do use 1 cm smaller stem on my SM on account of the "expanded frame."
