How are you using the bike? Unless you are touring or otherwise regularly pulling big loads (or live at the top of a 15 degree grade) I doubt you use the 26 all that much.
The beauty of the Pro V is how many different combinations of chain rings are available. Wherever I can, I like to simplify. For most riding, the gearing you suggest will be just right. The bike will look cleaner with two rings. The double combo - and putting a nice Simplex back to work - seem worthwhile to me.
