You know, I am absolutely the very last person on this earth to carp about the approach you suggest since all but one of my bikes was built exactly that way, but honestly, you'd think a person could go into a shop and give a description of what they wanted and be given several reasonable choices at the $2K price point. It's not like there aren't any being made by major manufacturers; we're a long way from the dark days when 25mm on a road bike was considered "super wide."
