I asked the same question a year or so ago and the group overwhelmingly suggested Compass Barlow Pass extralights for my Hillborne's lightweight wheelset. I hesitated about the price, finally pulled the trigger and my only regret was not getting them sooner. Being a dedicated Schwalbe person for their flat protection, I thought the Compass tires were transformative. Light, fast, cushy and responsive. I was initially paranoid about flats but that has faded after over a year without flats. I would suggest the fattest you can fit to provide the cushiness. With a lower pressure it seems to add suspension and flat protection but I've noticed no added sluggishness.
