Tim, I grew up at the base of Mt Diablo and have ridden just about every road and trail in that county. I don't have a Rodeo but my road bike is pretty similar, i run 35mm tires on it and I would ride most of the fire trails in the Diablo environs on it.
Moab is a bit different, I would definitely want fatter tires for a lot of that terrain. It just depends on what sort of trails you plan to ride. One question no one has asked. You are traveling with a bike and going to concerts. What is your security plan for your bike? The bike I would choose for the trip would be the one I could either replace the easiest or would pain me the least to lose.
