You could actually adopt a similar freewheeling approach to that racy bike too, you know - it's not like it's mounted on rails. Preconceptions are the only thing tying you down. You'd be shocked at how many people (admittedly, not people who weigh as much as I do) ride their 23mm-tyred racing bikes even on gravel roads.
