I've shaped a few sets of cork grips from riv. I think they have a tutorial video or at least detailed instructions on the site. It's pretty easy if you take your time. Make sure you don't cut the shifter cable channel too deep or else the whole grip splits down the middle. For the oury grips I just cut out a not too good looking hole in the back.
