Things have been covered in great detail really not much to add other than a +1 vote for Soma Cazaderos. Bit of a knob, solid centre line and rolls a bit nicer than gravelkings. All the boutique tyre brands are made by Panaracer anyway so let healthy scepticism lead your decision making. Fenders keep the rocks off your paintwork but can lead to serious life changing accidents off-road if you don't have quick release stays.
