Patrick, Lately I've been doing a simple meal prep of shiitake mushrooms, green lentils and brown rice in the Instant Pot with miso and turmeric! Very tasty - can adjust to taste. I soak the lentils and then the brown rice and lentils need the same cook time. Haven't tried with red miso, but I assume it would be good!
Also saw a lady online recently combine miso, garlic, maple, and juice from an orange that sounded like an interesting combination.
