David's tire suggestions are exactly what I would have counseled. It's interesting that the Challenge site doesn't list the Eroica anymore. That'd be a shame if they stopped making them — they are wonderful tires!
However, it looks like they've introduced another "gravel" racing tire: the Almanzo. Same width as the Eroica, but with nibbly tread, like the one found on the Grifo XS: http://www.challengetech.it/products/road/almanzo-open-030/00521/en That would be pretty awesome too.
