Forgive an amateur......
As I understand it, I certainly don't need X running to make IMAP, Apache, SSHD, or any of the other remote programs I run work. But X can be a major resource hog, and slows things down when I'm logging in remotely.
Before you start actually doing this, try to determine that X *is* slowing your system down. When it's inactive, it's unlikely to impact performance in any significant way. Shutting it down just makes more bother for you...
