My only question concerns resource usage by the GUI, in this case GNOME. See, my boss is mouse-dependent and knows nothing about linux, but wants to be able to at least do a few things on that server, add users and the like. I'm much happier with the CLI, especially on a server, but can't really get away with not having the GUI for him to use.
Definitely use Webmin. Great tool, very stable and very secure, and it can easily be setup to run over SSL so every connection is encrypted anyway.
Light, low on resources, will do everything your box wants and more, and will not give you grief in any way.
