IIRC, EAC will use FLAC to encode on a track-by-track basis, which means that it'll be applying ReplayGain tags to individual tracks... so you won't actually get an album-wide ReplayGain tag. (Not strictly true - in the absence of other tracks, ReplayGain will set the album gain value to the same as the track gain value - which is, of course, not what you want). Thus, unless there's an option in EAC to defer all encoding 'til after the rip is complete, it'd probably be better to leave EAC ripping to FLAC as it does at the moment, then executing metaflac (as Robin suggested) when your rip's finished.
