This is exactly what I do - and fortunately, no rocket science
required. In iTunes EDIT => Preferences => Advanced, leave the iTunes
Music Folder location unchanged, uncheck "Copy files to iTunes Music
Folder" (I also have "Keep iTunes Music Folder organised" unchecked as
I don't keep any music in this location)

Next, do File => Add Folder to library, and point it at the root of
your MP3 directory. It should then rattle through and populate your
library. 

I don't know if it will poll the folder for new additions or not as
I've only had the iPod for a few weeks and haven't added any additional
music.
