Classical music is a problem. There is a simple scheme described in http://wiki.slimdevices.com/index.cgi?BeginnersGuideToClassical but the basic problem is that slimserver (like every other computer audio system I've seen) doesn't really allow for classical music. Slimserver does recognise the "Band" tag, also "conductor" and "composer", but its use of them is very crude. (You could always vote for some enhancement requests on this subject, 2696 - 2701 !). The usual recommendation is to put the composer name in the Artist tag - not because this is clean, but because its the pragmatic way of being able to get to music with the system as it is (it also makes it more likely you can use the same files with other players). Filling in the "band", "conductor" and "composer" tags won't do a lot for you at the moment but, one day...
