ripped and therefore doubt it is really doing album replaygain.

deciding on genre's is an arduous task.  Many people have taken to
ascribing multiple genres to a single album.  Slimserver can
accommodate this by you separating the genre's with a semi-colon eg.
you might use mp3tag, highlight all dixie chicks tracks, right click,
select extended tags and change the Genre tage to equal "Country;Pop". 
After a rescan slimserver will show the albums and tracks under both the
Country and Pop genres.

At the end of the day genre's are there to help you find/ play your
music, you should feel free to do whatever is going to best help you do
that.  Personally I find allmusic.com's "Styles" classification very
useful.  As an example, their Rock Styles:

using their styles in place of the main genre classification would be
more useful for a slimserver user.  At the end of the day it all comes
down to personal preference and what method/ schema will allow you to
enjoy your music your way.
