Replaygain doesn't do anything to the data, it just adds tags to the files. You may as well add them, you can control whether SC takes any notice of them or not. I find it useful in theory when listening to tracks from different albums, but I hardly ever actually do that so it's not very relevant for me. YMMV.
EAC isn't the greatest at doing RG as it can only compute track gain, not album gain.
