As Moley6knipe mentioned, dbPoweramp s pretty good at this. I have my main collection sorted by Music/Mainstream/Artist/Album with both FLAC and MP3s in the albums. I can use dbPoweramp to run through the entire collection & create a mirror collection of 'MP3s of 'FLAC'. This is not read by SC & contains high quality MP3 versions of all my FLACs. Copies all tag information, including album art from the original FLAC files to the new MP3 files. With the set up I have, I note that 'folder.jpg' is not copied over, but that doesn't worry me as I have art embedded in each file. (maybe there is a button on dbPoweramp to copy the folder.jpg...I'm not sure).
What's nice about dbpoweramp is that it does not overwrite files already converted...so if I want to update the 'MP3 of FLAC' folder again, I just start the conversion on my whole collection & it only converts the 'new ones'.
