You could just remove it and flac.exe will use the default compression
level (I believe it's still 5). Like MrC says, though, there's little
to be gained in overall speed by using lower compression levels. Even
the highest levels are fairly fast, although you also gain very little
additional space by using them.
You might want to leave out the "COMMENT=%e" part of the command, as
all this adds is a comment tag to the effect of "Ripped by EAC". I
would just end up removing that comment or overwriting it in my
post-rip tagging.
Also, -V (verify), while recommended in many guides, is pretty widely
recognized as unnecessary. I've encoded (and re-encoded) 10's of
thousands of tracks without it and not a single Flac file created was
corrupted.
