As others have said, the slowest operation is the ripping - encoding is faster, even at maximum settings. You can set EAC to do both ripping and encoding simultaneously (i.e. ripping a track then encoding it while it rips another). You will find the encoding task stops before the track ripping stops. Set this using EAC - Tools - "On extraction, start external compressors queued in the background" radio button. Below that you can set how many "threads" to use, you should really only need one, but if you have a Hyper-Threading CPU like a late model Pentium 4 or a multi-core CPU you can use more than one.
