The simplest way is to use the Extended Tags dialog, where you can see
all of the fields existing in a file and add any others that you like. 
But this method can be tedious if you're editing the values of fields
for multiple files.

You can also define new columns in the file view and new fields in the
Tag Panel on the left.  The visibility of the columns can be turned on
and off.  I find that using the Tag Panel is best for editing fields
that you normally set to be the same for all tracks in an album.  For
example COMPILATION, ALBUMARTIST, ALBUMARTISTSORT, and usually
ARTISTSORT.  Normally I highlight all tracks in an album and then edit
the fields and hit 'save'.  The columns in the file view are best for
editing individual fields in files where the values tend to be
different - track title, for instance.  The columns are also handy if
you just want to view the field contents.

And you can address any field you like when creating Actions and Action
Groups.  Normally a drop-down list of fields is presented when you
define an action, but you can define any field name you like.
