Because it involves more "thumb twiddling" at the computer waiting for
a blue line to get longer.  With my slow old 'puter it takes about four
times longer to rip a CD to FLAC and MP3 at the same time than ripping
to FLAC alone.  

If I have, say, three CDs to rip, it is a much more efficient workflow
for me to rip them as quickly as possible, one after the other, and
then to batch convert them all at once. That way I can trot off and do
something else while the PC is busy on the conversion task rather than
sitting at the PC while I wait to put the next CD in the tray.
