If "sudo apt install lv2-dev" didn't help...
I've added some verbose logging. Grab the latest from git and try
this from your build directory:
cmake --log-level=VERBOSE ..
You should see the following in the output after it checks for lv2:
-- LV2_FOUND: '1'
-- LV2_INCLUDE_DIRS: '/usr/include'
-- LV2_LIBRARY_DIRS: ''
I'm guessing you are going to see LV2_INCLUDE_DIRS is ''. If so,
something might be wrong with your lv2 package configuration.

And your 25.12 builds fine.
Try this:
sudo apt install lv2-dev
Not sure it will help. Let us know how it goes. I'll keep digging
into how this can happen with cmake.
