I got in touch with the author of jZebra, an API that might help:

He asks "Does Satchmo Cart Software allow you to customize the
printing functions to perhaps use an applet? It looks to be open-
source, so that will likely help."

Any ideas on this?

My web developer has set up the current setup where it formats the
order info to a html page like the one attached previously which I
then print from a browser.

I'm sure he'd be able to edit this so the info can be put onto the
label sized area, it's just a case of being able to turn this into
something printable with a thermal printer.

Cannot seem to find any vector oriented direct thermal label printers,
they seem to be all character oriented?
