I think SL scanner support is good enough that you can start by looking
at the available scanners that do what you need for an acceptable price
and *then* investigate linux support.
For example, my wife's EPSON XP 830 Series printer has a flatbed scanner.
The printer and the scanner both work fine with my SL6 linux system
without significant effort.
I don't use the scanner often and have to remind myself what the
scanner command is called. I think you can scan via the web interface,
but IIRC I use the imagescan rpm that came with the device:
