[CnD] A RECIPE REQUEST

2017-12-21 Thread Marilyn Pennington via Cookinginthedark
Does anyone have a recipe for a sugar cookie frosting or glaze that will
harden, once you ice the cookie? I thought I had one, but of course, I
can't find it in my many recipes.

Thank you.

Hello everyone,

Re: [CnD] Applesauce Recipe Request

2015-11-12 Thread Penny Reeder via Cookinginthedark
Hi, I make applesauce all fall and winter long. I take a
heavy-bottomed dutch oven -- I think mine is 5-quart. I fill it with
apples, washed and quartered. I add the juice of a lemon, a cinnamon
stick, and a cup of water -- or apple cider if I have that. I bring it
to a boil, then turn it down to where there's a bubble every few
minutes -- just barely simmering, and cook until the apples are soft.
I stir it once in a while. Your house will smell wonderful while the
apples are cooking.

When the apples are soft, I run everything through a food mill, which
removes the skins and cores and the cinnamon stick and any lemon seeds
that made their way into the pot.

I add a third of a cup or more of sugar or agave, then store in the fridge.

It's not a precise recipe, but it makes delicious applesauce! Oh, and
I use whatever apples I have on hand -- often, there are several
varieties. And, if I have a couple of pears, I throw them into the
pot, as well -- they sweeten the applesauce so well, you can add even
less sugar!

Happy cooking.
Penny

Re: [CnD] another recipe request this is for sugar

2015-03-14 Thread Sugar via Cookinginthedark
Hi, hope this is it:
LAYERED DORITOS CASSEROLE
1 (family size) bag Doritos, any flavor (I used Nacho Cheese)
1 onion, diced
1 pound lean ground beef
1 clove garlic, minced
1 package low sodium taco seasoning
1 cup salsa
1 cup sour cream
1 can cream of chicken or mushroom soup
2 cups shredded cheese, (I used tex mex blend)

Optional toppings
Lettuce
Tomato
Olives
Sour Cream

Preheat oven to 350 degrees. Place salsa in a strainer to drain while
preparing beef.

Cook ground beef with onion and garlic until no pink remains. Add
taco seasoning and 1/2 cup of water. Stir until thickened and remove
from heat.

In a large bowl, combine drained salsa, sour cream, soup and 1 cup
of cheese. Add in beef and stir well.

Slightly crush Doritos (not completely, you don't want crumbs).
Layer 11/2 cups Doritos in the bottom of a casserole dish (mine
was 2qt) . Top with 1/2 of the beef mixture. Repeat layers. Finally
top with an additional 1 to 1 1/2 cups Doritos and remaining
cheese.

Spray a piece of foil with cooking spray and cover casserole. Bake
30 minutes covered, remove foil and bake uncovered for an
additional 20 minutes or until hot and bubbly. Top with lettuce,
tomatoes and olives if desired.

So don't worry about tomorrow, for tomorrow will bring its own worries.
Today's trouble is enough for today.

The spelling is almost correct; substitute a k for the c and you have
it. I almost pasted in the recipe I have, but I remembered in time
that you don't want recipes from the Internet.

Baklava isn't really complicated, but you have to work quickly to keep
the Phyllo dough from drying out.

Every good one I've encountered does. Here's the one I got from my
grandmother. I've made it both before and after I misplaced my sight.

Mrs. Massey’s Broccoli-Rice Casserole

NOTE: A holiday classic, no one knows where Althea Massey got this recipe,
though it originally called for a medium jar of Cheese Whiz, so it can't be
too old. Diced celery and diced green onion or sliced mushrooms can be added
for extra flavor.

Serving Size: 6

Amount Measure Ingredient -- Preparation Method

½ cup rice, instant
10 ounces frozen broccoli -- chopped
1 can cream of mushroom soup, condensed
1 medium onion -- diced
4 tablespoons Butter
10 ounces Velveeta or Velveeta Light
-- cubed

Preheat oven to 300.
Cook broccoli. Cook rice. Chop onion and sauté in butter. Blend everything
well, mixing in the broccoli in last. Bake in oven till bubbly- 30-60 min.
This recipe is fine if pre-made.

Hi Jeri,

Here's a pretzel recipe I found on the web when I was in college. My
ex-fiance used to make this all the time and it is really good!! I even
bought us a rock salt grinder so we could grind rock salt for our pretzels.
It makes them delicious, in my opinion!!

Pretzels (Buttery soft pretzel sandwich) Ingredients
3 and 1 half cups flour.
3 tablespoons sugar.
2 teaspoons salt
1 package active dry yeast.
1 and 1 fourth cups hot water
2 tablespoons butter
salt or Sesame seeds for topping.
Instructions
Combine flour, sugar, salt, and yeast into a mixing bowl.
In a small sauce pan warm the water.
Place the butter in the water and mix until it melts.
Water mixture should not exceed 120 degrees f. or you will ruin the yeast.
Add the liquid mixture to the dry ingredients and mix until well combined
about 4 minutes.
Kneed the dough until smooth and supple, about 7 minutes.
place the dough into a buttered bowl, coating the entire dough with the
butter.
Cover with plastic wrap and allow to rise for 40 minutes.
Place the dough onto a cutting board and cut it into 8 or 12 different
pieces.
Shape the dough and place on to a cookie sheet lined with buttered parchment
paper.
Sprinkle on your favorite toppings.
Cover with a cloth and allow to rise for 8 minutes.
Bake at 375 degrees for about 20 minutes until golden brown.

I'm sure, instead of using buttered parchment paper, you could use
Silpat sheets and butter them, if you have them. My ex never tried it with
those, but they weren't around then.
Enjoy,
Dawnielle

Hi Marilyn,

I have a couple of oven baked pancake recipes and both are good. as for the
ground sausage, I use Jimmy Dean sausage that comes in a fat plastic covered
roll. It is like ground beef when you open it and break it up. You can fry
it and put on top of the oven pancake, I guess

OVEN PANCAKE, GERMAN STYLE
6 eggs, slightly beaten
1 c. all-purpose flour
1 c. milk
3 tbsp. butter, melted
Pinch salt
Syrup, confectioners' sugar or cut up fruit for topping

 Preheat oven to 450º
Grease well 13 x 9 x 2 inch baking dish

Mix eggs together with flour in medium size bowl.
Add milk, butter and salt and mix well.
Pour into prepared dish.

Bake for 15 to 20 minutes or until puffed.
Cut into serving pieces. Serve with syrup, confectioners' sugar, and-or cut
up fresh fruitMakes 4 servings.
or
Baked Buttermilk Pancakes

1 large egg, beaten
1 tablespoon butter, melted
1 1/2 cups all-purpose flour
4 tablespoons granulated sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 3/4 cups buttermilk
1/2 cup powdered sugar
 Preheat oven to 400 degrees.
Spray an 8-inch pie plate with vegetable cooking spray
In a large bowl combine egg with melted butter; whisk until well combined.
Sift together flour, sugar, baking soda, baking powder and salt in a small
bowl; combine with egg mixture.
Pour in buttermilk and stir until just combined.
Transfer into prepared pie plate and bake for 25 minutes or until set and
lightly browned on top.
Let sit for 5 minutes; sprinkle with powdered sugar and cut into wedges.
 Serve warm.
 Makes 6 servings.

1 cup packed brown sugar

1 egg

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1 1/2 cups mashed ripe bananas

4 cups uncooked regular or quick oats

1/2 cup dried currants -- raisins, prunes or

-- apricots

1/2 cup chopped nuts

1/2 cup sunflower seeds

Preheat oven to 350 degrees. Grease 13 x 9 x 2-inch pan. Cream together in large

bowl, butter and sugar until fluffy, using electric mixer. Add egg, salt,
cinnamon

and bananas. With spoon, stir in remaining ingredients. Spread smoothly in pan.
Bake

[CnD] meatball recipe request

2010-01-07 Thread barbara esposito
Hi Lee,
Hope this helps.
Theresa's meatballs

5 pounds of frozen cooked meatballs

2 (10 1/2 oz) cans of cream of mushroom soup

2 (10 1/2 oz) golden mushroom soup

2 (14 oz) cans beef broth (I like to get the low sodium broth)

2 envelopes brown gravy mix

Combine all ingrediets in crock. Stir well, cover and cook Low - 6 hours or
High - 3 hours.

We put everything in the crock pot minus the meatballs, turn on and combine
together before putting the meatballs in. It makes it easier to stir in the
meatballs while making sure that all of the ingredients are combined.

[CnD] A recipe request I forgot

2009-12-16 Thread gina brown

Hi, I forgot a recipe I'd like to get when I sent my email this morning. Could
anyone please
send me a recipe for Mexican Wedding Cakes or similar cookies? I'd like to
make some for
Christmas.

Thanks in advance.

Sincerely,

Gina

Mexican Wedding Balls

1-1/2 cups whole blanched almonds
1-1/2 cups unsalted butter at room temperature
1/3 cup granulated sugar
1 tbsp pure vanilla extract
3-1/4 cups all-purpose flour
2 cups icing sugar, sifted

Toast almonds on baking sheet in 350F oven on centre rack until golden
brown, 10 minutes. Cool; finely chop.

Blend butter and sugar using paddle attachment of stand mixer on low
speed,30 seconds. Increase speed to medium and mix until smooth and pale, 5
to 7 minutes. Add vanilla; mix until incorporated, about 30 seconds,
scraping down sides of bowl. In medium bowl, mix almonds and flour. Fold
half of flour mixture into butter mixture by hand with rubber spatula. Fold
in second half until combined, 1 to 2 minutes.

Cover bowl with plastic wrap; chill at least 1 hour. Line 2 baking sheets
with parchment paper. Hand-roll dough into 1-1/2 inch balls. Place on baking
sheets about 1 inch apart. Press lightly on each cookie to flatten bottom.
Bake at 350F on centre rack of oven, until cookies start to colour, 15 to 20
minutes. For even baking, turn sheets every 5 minutes and rotate pans
halfway through if using middle and upper rack. Cool 2 minutes. Gently toss
in icing sugar. Cool, roll in sugar again.

Makes 36 cookies.
