Re: [CnD] Applesauce Recipe Request
Hi, I make applesauce all fall and winter long. I take a heavy-bottomed dutch oven -- I think mine is 5-quart. I fill it with apples, washed and quartered. I add the juice of a lemon, a cinnamon stick, and a cup of water -- or apple cider if I have that. I bring it to a boil, then turn it down to where there's a bubble every few minutes -- just barely simmering, and cook until the apples are soft. I stir it once in a while. Your house will smell wonderful while the apples are cooking. When the apples are soft, I run everything through a food mill, which removes the skins and cores and the cinnamon stick and any lemon seeds that made their way into the pot. I add a third of a cup or more of sugar or agave, then store in the fridge. It's not a precise recipe, but it makes delicious applesauce! Oh, and I use whatever apples I have on hand -- often, there are several varieties. And, if I have a couple of pears, I throw them into the pot, as well -- they sweeten the applesauce so well, you can add even less sugar! Happy cooking. Re: [CnD] another recipe request this is for sugar
Hi, hope this is it: LAYERED DORITOS CASSEROLE 1 (family size) bag Doritos, any flavor (I used Nacho Cheese) 1 onion, diced 1 pound lean ground beef 1 clove garlic, minced 1 package low sodium taco seasoning 1 cup salsa 1 cup sour cream 1 can cream of chicken or mushroom soup 2 cups shredded cheese, (I used tex mex blend) Optional toppings Lettuce Tomato Olives Sour Cream Preheat oven to 350 degrees. Place salsa in a strainer to drain while preparing beef. Cook ground beef with onion and garlic until no pink remains. Add taco seasoning and 1/2 cup of water. Stir until thickened and remove from heat. In a large bowl, combine drained salsa, sour cream, soup and 1 cup of cheese. Add in beef and stir well. Slightly crush Doritos (not completely, you don't want crumbs). Layer 11/2 cups Doritos in the bottom of a casserole dish (mine was 2qt) . Top with 1/2 of the beef mixture. Repeat layers. Finally top with an additional 1 to 1 1/2 cups Doritos and remaining cheese. Spray a piece of foil with cooking spray and cover casserole. Bake 30 minutes covered, remove foil and bake uncovered for an additional 20 minutes or until hot and bubbly. Top with lettuce, tomatoes and olives if desired. So don't worry about tomorrow, for tomorrow will bring its own worries. Today's trouble is enough for today. ~Matt. 6:34-Sugar -Original Message- From: Kimsan via Cookinginthedark [mailto:cookinginthedark@acbradio.org] Sent: Friday, March 13, 2015 11:27 PM To: cooking Subject: [CnD] another recipe request this is for sugar Someone posted this a week or ago, and I had a computer crash, so lost it. The spelling is almost correct; substitute a k for the c and you have it. I almost pasted in the recipe I have, but I remembered in time that you don't want recipes from the Internet. Baklava isn't really complicated, but you have to work quickly to keep the Phyllo dough from drying out. My ex-fiance used to make this all the time and it is really good!! I even bought us a rock salt grinder so we could grind rock salt for our pretzels. It makes them delicious, in my opinion!! Pretzels (Buttery soft pretzel sandwich) Ingredients 3 and 1 half cups flour. 3 tablespoons sugar. 2 teaspoons salt 1 package active dry yeast. 1 and 1 fourth cups hot water 2 tablespoons butter salt or Sesame seeds for topping. Instructions Combine flour, sugar, salt, and yeast into a mixing bowl. In a small sauce pan warm the water. Place the butter in the water and mix until it melts. Water mixture should not exceed 120 degrees f. or you will ruin the yeast. Add the liquid mixture to the dry ingredients and mix until well combined about 4 minutes. Kneed the dough until smooth and supple, about 7 minutes. place the dough into a buttered bowl, coating the entire dough with the butter. Cover with plastic wrap and allow to rise for 40 minutes. Place the dough onto a cutting board and cut it into 8 or 12 different pieces. Shape the dough and place on to a cookie sheet lined with buttered parchment paper. Sprinkle on your favorite toppings. Cover with a cloth and allow to rise for 8 minutes. Bake at 375 degrees for about 20 minutes until golden brown. I'm sure, instead of using buttered parchment paper, you could use Silpat sheets and butter them, if you have them. My ex never tried it with those, but they weren't around then. Add vanilla; mix until incorporated, about 30 seconds, scraping down sides of bowl. In medium bowl, mix almonds and flour. Fold half of flour mixture into butter mixture by hand with rubber spatula. Fold in second half until combined, 1 to 2 minutes. Cover bowl with plastic wrap; chill at least 1 hour. Line 2 baking sheets with parchment paper. Hand-roll dough into 1-1/2 inch balls. Place on baking sheets about 1 inch apart. Press lightly on each cookie to flatten bottom. Bake at 350F on centre rack of oven, until cookies start to colour, 15 to 20 minutes. For even baking, turn sheets every 5 minutes and rotate pans halfway through if using middle and upper rack. Cool 2 minutes. Gently toss in icing sugar. Cool, roll in sugar again. Makes 36 cookies.
