I am not familiar enough with C++ to know how to test my theory, but I think
you can rest assured that this is not a latte-dock problem. I suspect it is an
issue upstream with Electron.

Looks like with any plasmoid added, to the panel that can expand, such as Event
Calendar or most time/date related ones, when you click on them to expand it,
the entire panel changes color back to the same tiling
