I'm able to recreate the artifacts (on the primary display) by
increasing and decreasing the resolution, but I'm not able to recreate
the crash, neither via Alt-Tab nor via dragging windows over the parts
of the display to force them to be redrawn.

Yes, this does appear to be the result of bug 733240. Rebooting got the
filesystems clean again and os-prober found the OS in the extended partition.

In rescue mode, I had set the root file system to /dev/ubuntu-alternate-
lvm/root and noticed that there is no option to 'Reinstall grub', which
is generally an option in rescue mode. Maybe this is specific to LVM.
I'm not familiar with how grub is supposed to work there.

This is not a problem on kubuntu (kubuntu-desktop-amd64+mac.iso from
2011-03-29.1). Persistence works as expected. In this case, I used an
ext3 partition on a USB stick and added 'persistent' to the boot
options.
Needs to be restested with ubuntu-desktop-amd64+mac.iso.

I'm trying this out with jockey-gtk-0.9.2-0ubuntu3pitti1 on Natty dev
(2011-03-29) with nvidia-current-270.30-0ubuntu3
* No xorg.conf (- nouveau)
= passed (default setup, a noop)
* enable nvidia in jockey (- proprietary)
= passed, but thinks it fails
jockey.log shows: (also attached the tail
Updated to Martin's jockey-gtk-0.9.2-ubuntu3pitt2 (Alberto's patch).
All tests pass!
Jockey now recognizes the nvidia driver after it's been installed.
Fallback from nvidia to nouveau still works.

The tap+drag also works in nautilus. Of course, for standard tap+drag,
you don't need to hold Alt. Alt is just the modifier in for moving a
window by dragging the mouse.
Some of the issues may be the result of the new click pad functions not
being well documented yet.

My environment was not inherited from a previous version of Ubuntu. I am
on Natty, development branch (up to date as of 2011-03-12). I am logged
in to U1 but have no contacts in U1 nor in Evolution (apart from my
