I'd vote for just Duplex LC footprint.  Same as Simplex SC.  Yes, you can plug 
two simplex LC into a duplex SC coupler.   

My only request would be for enough space on either side to be able to get a 
mechanical SC in.  Not 100% needed but if you can do it it would really help.  
It is hard to find outdoor armored patch cables without a breakout on one end 
so sometimes we just do a mechanical on 3mm drop cable.

Can you use a double connector to join single jumpers?  I have never 
tried.  

Working on a combo DC surge suppressor with fiber storage and a place 
for the fiber connectors.  I will have to have some sheet metal holders for the 
mini patch panel and am working out how many different cut out holes I will 
have to offer to cover all the potential uses.  If I have one that will do two 
double LC connectors and a second option for two double SC, will that take care 
of most applications?

Most of the time the duplex connectors are two 1 strand 1 connector with a
plastic piece that puts the two together.
