Hi Kevin,
 
My brewing system has evolved over the years.  I started by boiling
water and malt extract in the kitchen to brewing outside.  I don't see
much of the kitchen any more because of boil overs.  But I purchased a
big gas stove and I am now boiling over out side!  Actually, it is not
that bad, it is just better being outside drinking a few hand crafted
beers with friends while brewing outside.
 
My current setup consists of 3 half barrel kegs that I use to mash,
sparge, and boil in.  Basically, it is a 3 tear system.  The top level
is for hot water for rinsing grain, the middle is the mash tun where you
soak the crushed grain, and the bottom level is the boiler.
 
It is a very interesting process.  I really enjoy making Pale Ales,
Porters, and Stouts.  My basic standard beer is a Sierra Nevada clone
with a tun of Cascade and Centennial hops.  
 
Tell me about the types of beers you like to brew and your setup.  I
would love to hear about it.  I don't know any other blind brewers.   It
would be cool to share notes.

I used to brew regularly but getting to shops that sell ingredients has 
become harder as the stores are much further away and shipping is too 
costly.  I must admit I am a lazy brewer using prepared malt extracts and 
hopped malt extracts along with added hops, mostly pellitized hops.  My 
preference is for dark ales, porters and stouts and occasionally a dark 
beer.  I have had good luck with both a single fermentation method and a two 
stage fermentation approach.  I generally have had excellent luck with only 
one batch which acquired a yeast infection turning the product into 
something one couldn't or at least probably shouldn't drink.  rd

Ron,

I am beginning to understand what you are talking about with
respect to brewing component availability and cost
effectiveness.
I am about 125 miles north of Las Vegas, probably the best
place to go for hands on products and equipment.
I also am still using a single fermentation process and
mixes for the most part.
Are you aware of any good recipes that will assist a willing
if not terribly accomplished amiture brewer move to the next
level?

Larry, I know there were some recipes around here somewhere.  I usually use 
a can of hopped malt of the best type available based on vague memories, use 
additional liquid malt or dehydralized malt, maybe 4 lb of the latter and up 
to 7 lb of the former.  I add the hop pellets again selected from what's 
seems available at the time.  I used to stop fermentation just short of 
completion and let it finish in the bottles.  Now, because it's easier, I 
let it finish and then add a small amount of corn sugar solution to the 
fermented brew before bottling to produce the carbonation.   RD

Hi,


I have found that a beer that has really off flavors due to high
fermentation temps or ferments that were stuck taste much better after a
few months of sitting around.  This is easy when using kegs though.  I
think the use of Cornie Kegs in brewing has been a real convenience.
They are the old Coke and Pepsi soda kegs.  They hold 3.5, 5, or 10
gallons.  If you need a beer to sit around, it is nice to tap it and
check it once in a while.  The other nice thing about the kegs is that
you do not have to be concerned about under or over carbonating the
beer.  You control it with forcing CO2 into the keg or letting it out.

Once it is infected, you might as well make some tasty malt vinegar!  

I have not really ordered extract or grain through the mail, but there
are some that will provide free shipping, if you buy enough.  A few

Some things that I did that made my recipes much better were to
incorporate some of the following suggestions.  It is certainly possible
to make really good beer with extract, specialty grains, good yeast and
water.  Oh ya, and using a good sanitizer too.
 
If you are mainly interested in recipes, let me know and I would be
happy to get them for you.  But if you are interested in techniques,
here are a few:
 
 
Try to do a full wort boil.  If you can boil the full 5 or 6 gallons,
that is ideal.
 
After the boil, use a chiller of some type.  They are easy to make out
of 3/8 copper tubing and hooked up to a garden hose.  If not a tub or
sink with cold water and ice will work.  Don't add ice to the wort to
bring the temp down to the temperature that you want to add the yeast.
 
 
Hydrate your yeast at the recommended temperatures.  If using dry yeast,
it is a good idea to feed the yeast with a pint of your unfermented wort
to get the yeast started.
 
When adding the wort to the fermenter, aerate it.  It is easy to point
the siphon tubing at the side of the fermentor or just shake it.  If you
want to go a little crazy, bubbling pure O2 for 30 seconds works good,
but not necessary.  A good healthy and fermenting starter will do a good
job on most batches of beer with a specific gravity of 1.060 or lower.
 
 
When fermenting, keep the temps stable and in the range appropriate for
the yeast.  A real good technique for doing this is to get a wash tub or
trashcan and put your fermentor in the middle.  Add water to the tub and
you can control the temperature by adding ice or a fish heater to
maintain temps where you want them.  Floating a thermometer in the water
bath gives you the actual temperature of the fermenting beer.
 
One of the biggest rules in brewing is keep it sanitary.  After the
chill, anything that comes in contact with the wort needs to be
sanitary.  That includes tubing, spoons, fomenters, ect.  There are a
few really good sanitizers available.  One is Iodopher which has an
iodine base.  The problem with it is that it does stain things.  The
other good one is called StarSan by 5 Star.  They are both one step
sanitizers and do not need to be rinsed out.  It just requires a 2
minute contact to sanitize.  Of course the surface has to be clean
first.

The following is a recipe for a fairly sweet sherry.  I haven't tried it, but 
the woman who makes it regularly says that it isn't too bad at all.
Sherry

450 grams  black grapes

1.4 kg sugar

375 grams sticky raisins, I just used what was available at supermarket, not 
sticky

2.8 litres boiling water

1 diced apple

1 diced potato

1 slice of toast

sprinkle with 1 dessertspoon of yeast

Place all in a plastic bucket floating the toast with the yeast on the top and 
leave covered for 3

days.

Drain through muslin, bottle and cork lightly.

Leave another three weeks, re-strain and bottle again.

end of recipe.





Now the bit about sprinkling the yeast on to a slice of toast and floating it 
on the brew does sound rather odd to me.

Why toast?  why not bread, as toast or bread would both become water-logged and 
would sink to the bottom.

and why sprinkle the yeast on it?

why not just toss the yeast into the brew for that is where it is wanted.

The scientists on the list may be able to clarify the reason for this, to me, 
peculiar requirement.

I am still a young brewer. I boil
water and malt extract in the kitchen just the way you started.

I don't get as elaborate as you. I buy brue kits and all the 
ingredients are pre measured to achieve a particular brew. I may get 
in to a larger set up and do more envolved brewing when I retire.
