[CnD] Brown Rice Pilaf with Almonds and Parsley

I want to make the following recipe.
I have some questions though.
1. according to the ingredients the brown rice is uncooked.
It says that the brown rice should be done in 25 minutes. I have never 
had my brown rice done in that short a time unless I soaked it for an hour.

My rice unsoaked takes about 45 minutes.
How are they accomplishing this any ideas.
2. I want to substitute walnuts for the almonds anyone see any problems 
with doing so?
3. I want to add about 1/2 cup of greens like cabbage? I think this 
should add about 5 minutes to the recipe. Am I on the right track?

Brown Rice Pilaf with Almonds and Parsley - Servings:Makes 4 servings
Ingredients
2 teaspoons olive oil
1 yellow onion, chopped
1 cup brown rice
2 1/2 cups low-sodium chicken broth
1 cup fresh flat-leaf parsley, chopped
1/4 cup (1 ounce) sliced unsalted roasted almonds
Kosher salt and pepper
directions
Heat the oil in a medium saucepan over medium-high heat. Add the onion 
and cook, stirring  occasionally, until soft, about 6 minutes. Stir in 
the rice and cook for 1 minute. Add the broth  and bring to a boil. 
Reduce heat and simmer, covered, until the rice is tender and the broth 
is  absorbed, 20 to 25 minutes. Stir in the parsley, almonds, 1/2 
teaspoon salt, and 1/4 teaspoon  pepper and transfer to a serving bowl.

Picnic Bacon Ranch Layered Spread
Looking for an easy and delicious appetizer for your next party? This
recipe is sure to be a favorite!
Makes 4 1/2 cups
Prep time: 15 min.
Chilling time: 1 hr.
Ingredients:
Spread Ingredients: 
1 - cup sour cream
1 - package (8-ounce) cream cheese, softened
2 - Tablespoons Ranch Seasoning
Toppings Ingredients: 
6 - ounces (1 1/2 cups) Cheddar Cheese, shredded
12 - slices (3/4 cup) bacon, cooked, chopped
1/3 - cup sliced green onion
Crackers
Directions:
In a medium bowl, combine sour cream, cream cheese, and seasoning. 
Beat at medium speed until smooth.
Spread onto large serving plate to 1 inch of edge.  Top with cheese,
bacon and onion.
Cover and refrigerate for 1 hour to blend flavors.  Serve with

[CnD] O/T: Steve Stewart's Mother Has Passed

It is with a heavy heart I  post this note.
Steve Stewart, our list moderator, contacted me and  informed me his 
mother, Billy Jo, passed away Tuesday morning.

Her services will be tomorrow, Thursday, at Gibson Funeral Home.
Family visitation is scheduled for this evening.

the flower pot- (936) 632-8400
They are a local florist and can deliver to the funeral home.

Gibson's is the only Gibson's in town so just let them know it is for

Billy Jo Lee Stewart, 85, of Lufkin, was born August 14, 1926 in 
Purdon, Texas, the daughter of the late Maudia Mae (Richardson) and 
Jack Wilford Lee. She passed away Tuesday, May 15, 2012 in a local 
hospital. Mrs. Stewart was a loving wife, mother, grandmother, and 
great-grandmother. She was class valedictorian of the Apple Springs 
Graduating Class of 1944. She was a charter member of the Apple 
Springs Old TimersAssociation and a member of Calvary Baptist Church 
in Lufkin. Mrs. Stewart enjoyed ceramics and quilting. Survivors 
include her son and daughter-in-law, Steve and Gina Stewart; 
daughter, Brenda Jones; grandchildren, Christopher Lee and Janay 
Jones and Grant Jones and fianc Diana Shupak; great-grandchildren, 
Kanin Lee Jones, Dustin Shupak and Dayton Shupak; sister, Lynda K. 
Lee Owens and husband Larry G. Owens; sisters-in-law, Oleta Stewart 
and Jacqueline Stewart and husband Carroll; and a number of other 
family members and friends. In addition to her parents, Mrs. Stewart 
was preceded in death by her husband, Charles Ray Stewart; 
brother-in-law, Bill Stewart; and nephew, Ted Stewart. Pallbearers 
will be Christopher Lee Jones, Grant Daniel Jones, Bill M. Stewart, 
Mitchell Stewart, Dayton Michael Shupak and Keith Lewing. Honorary 
pallbearers will be her great-grandson, Kanin Lee Jones; and nephews, 
Tim Stewart and David Stewart. Services for Mrs. Stewart will be held 
at 2 p.m. Thursday, May 17, 2012 in the Gipson Funeral Home Chapel, 
with Reverend Horace Fletcher officiating. Interment will follow in

Cracker Barrel Double Fudge Coca-Cola Cake Recipe

 

This recipe will bring back childhood road trip memories - it tastes just like 
you remember!

 

Ingredients

. 1 C. Coca-Cola

. 1/2 C. oil

. 1 stick margarine

. 3 Tbs. cocoa

. 2 C. sugar

. 2 C. flour

. 1/2 tsp. salt

. 2 eggs

. 1/2 C. buttermilk

. 1 tsp. baking soda

. 1 tsp. vanilla

. . Frosting:

. 1/4 lb. margarine

. 3 Tbs. cocoa

. 6 Tbs. cream or milk

. 1 tsp. vanilla

. 1/2-1 C. pecans chopped

. 1 lb. confectioners' sugar

Directions

 

In a saucepan, bring Coca-Cola, oil, margarine and cocoa to a boil; mix the 
sugar, flour and salt, Pour in the boiling liquid and beat well. 

Add

 the eggs, buttermilk, soda and vanilla and beat well. Pour into a greased and 
floured sheet 

cake pan

 and bake at 350 degrees for 20-25 minutes.

 

To make frosting, in a saucepan, combine butter, cocoa and milk and heat until 
the butter melts. Beat in the remaining ingredients, and spread on the hot

cake.  Cool and cut.  Enjoy.

old, married to a wonderful man named Blaine and we have a 2 year old Biechon 
Schit  Zu cross whoe name is Patches.  I work outside of the home at two 
different places.  At Canadian Mental Health selling cash calendars, as well I 
wrote at a company called Sigma Analytics.  At this place I phone people to get 
them to do surveys.  A firend of mine told me she gets all of these recipes 
from people from  all over the world, although I don't do alot of cooking, I

[CnD] Coca-cola Cake

Coca-cola Cake

2 cups unsifted flour
2 cups sugar
2 sticks butter or margarine
3 tablespoons cocoa
1 cup Coca-Cola
1/2 cup buttermilk
2 beaten eggs
1 teaspoon baking soda
1 teaspoon vanilla
1 1/2 cups miniature marshmallows

ICING:
1 stick butter or margarine
3 tablespoons cocoa
6 tablespoons Coca-Cola
1 box powdered sugar
1 cup pecans, chopped

Combine flour and sugar in a large bowl. Heat butter, cocoa and Coca-Cola to 
boiling. Pour over flour and sugar and mix well. Add buttermilk, eggs, soda, 
vanilla and marshmallows; stir. Pour into a greased and floured (9x13x2 inch) 
pan. Bake 350° for 35-45 minutes or til tests done with a toothpick.
ICING:
Combine butter, cocoa and Coca-Cola and heat to boiling. Pour over powdered 
sugar and beat well. Add pecans and spread over cake.

Easy Strawberry Trifle

1 (7-ounce) package 

jelly rolls,

sliced 

1 (3 1/2-ounce) package vanilla instant pudding mix 

1 1/2 cups 

milk 

3 cups frozen whipped topping, thawed - divided use 

2 cups sliced fresh strawberries 

Addition strawberries for garnish (optional)

1. Cut each jelly roll into 3 slices; arrange cut sides of slices around sides 
and bottom of a 2 1/2-quart glass 

soufflé

 or trifle dish. Fill in with remaining jelly roll slices. 

2. Prepare pudding mix according to package directions, using 1 1/2 cups milk; 
let stand 5 minutes. Fold in 1 cup 

whipped 

topping. 

3. Arrange half of sliced strawberries over jelly roll slices; stop with 
pudding mixture. Arrange remaining sliced strawberries over pudding mixture; 
dollop

or pipe remaining whipped topping on top. Garnish with additional strawberries, 
if desired.

This receipe I have never tried, but it looks sinple and I hope you enjoy 
it.  I got it from a recipe book


Pork Chop Dinner

Ingrediants:
Small bite sized pieces of carrot   1 1/2 cups
Small bite sized pieces of potato   2 1/2 cups
Small bite sized pieces of onion1 cup
Small bite sized pieces of parsnip  1 cup

Pork loin chops trimmed of fat   6
Liquid gravy browner  1 tsp.
Condensed cream of mushroom soup10 oz.
Water1/2 cup

Proceedure:
Put carrots in 5 quart (5 L) slow cooker.  Layer potatos, onion and parsnip 
over top.

Bruch both sides of pork chops with gravy  browner.  Lay over parsnip.
Stir soup and water together in a bowl.  Pour over all.
Cover and cook on Low for 9 to 10 hours or on High for 4 1/2 to 5 hous. 
Serves 6.


Just a little note here.  If I don't have exactly what the recipe says I 
will leave it out, or put something else similar in.  Any recipe I do in the 
crock pot always turnes out just perfect.  Meat comes out so tender when 
done in the crock pot.

scrape the sides so ingredients are blended. Add cooled coca cola mixture
and beat. Add remainder of flour and beat until completely smooth about 
3 -
4 minutes. Batter will be thick. Place batter into a 13 by 9 by 2-inch 
oiled
and floured baking pan. Set pan on top shelf in a preheated 350 degrees 
oven

for 35-40 minutes. Check for doneness with a toothpick. If the toothpick
comes out clean after sticking in the middle of the cake, the cake is 
done.

 My name is Linda Ratzlaff I live in Regina Saskatchewan Canada.  I am 51
 years old, married to a wonderful man named Blaine and we have a 2 year
 old Biechon Schit  Zu cross whoe name is Patches.  I work outside of the
 home at two different places.  At Canadian Mental Health selling cash
 calendars, as well I wrote at a company called Sigma Analytics.  At this
 place I phone people to get them to do surveys.  A firend of mine told me

 she gets all of these recipes from people from  all over the world,
 although I don't do alot of cooking, I thought I would be interested in
 getting involved in this list.  So here I am.

Honey Pecan Crusted Chicken



1/4 teaspoon salt
1/4 teaspoon pepper
4 (6-ounce) skinned chicken breast halves
8 (4-ounce) chicken drumsticks, skinned
1/4 cup honey
2 tablespoons Dijon mustard
3/4 teaspoon paprika
1/8 teaspoon garlic powder
1 1/4 cups finely crushed cornflakes (about 4 cups uncrushed cereal)
1/2 cup finely chopped pecans
Cooking spray

Preheat oven to 400F.

Sprinkle salt and pepper evenly over chicken; set aside. Combine honey, 
mustard, paprika, and garlic powder in a small bowl; stir well. Combine 
cornflakes and pecans in a shallow dish; stir well. Brush both sides of 
chicken with honey mixture; dredge in cornflake mixture.


Place chicken pieces on a large baking sheet coated with cooking spray. 
Lightly coat chicken with cooking spray, and bake at 400F for 40 minutes 
or until done. Makes 8 servings.

COCA-COLA BROWNIE CAKE

1 3/4 C. granulated sugar

2 1/2 C. sifted flour

1 stick butter or margarine

1/2 C. vegetable oil

1 tsp. baking soda

3 T. cocoa

2 eggs

1/2 C. buttermilk

1 tsp. vanilla extract

1/2 C. Coca-Cola

Brownie Frosting

3 C. confectioners' sugar

1/4 C. butter or margarine

3 T. cocoa

1/3 C. Coca-Cola

1/2 tsp. vanilla extract

3/4 C. chopped pecans

Combine all ingredients except vanilla extract and Coca-Cola. Blend at low

speed of mixer, then beat 2 minutes at medium speed. Add vanilla extract,

blending in well by hand. Add Coca-Cola and blend well by hand. Pour into

greased tube pan. Bake at 350 degrees for 50 minutes. Cool and turn onto

cake rack. While cake is still warm to touch, top with Brownie Frosting.

Frosting: Combine sugar, butter, cocoa, Coca-Cola and vanilla in small

bowl. Beat until smooth. Stir in chopped pecans. Spread on warm cake. (May

need to return cake to oven to warm after turning out on rack.)

Raspberry Trifle

Prep Time:15 min

Start to Finish:4 hr 15 min

Makes:16 servings

1 box Betty Crocker® white angel food cake mix

1 1/4 cups cold water

2 cups boiling water

1 box (8-serving size) sugar-free raspberry-flavored gelatin

2 packages (10 oz each) frozen sweetened raspberries, thawed

3 containers (6 oz each) Yoplait® Original red raspberry yogurt

1.

Move oven rack to lowest position (remove other racks). Heat oven to 350°F.

2.

In extra-large glass or metal bowl, beat cake mix and cold water on low

speed 30 seconds; beat on medium speed 1 minute. Pour into ungreased 10-inch

angel

food (tube) cake pan. Do not use fluted tube cake pan or 9-inch angel food

(tube) cake pan, or batter will overflow.

3.

Bake 37 to 47 minutes or until top is dark golden brown and cracks feel very

dry and not sticky. Do not underbake.

4.

Immediately turn pan upside down onto glass bottle until cake is completely

cool, about 1 hour. Run knife around edges; remove from pan. Tear cake into

about 3/4-inch pieces.

5.

Pour boiling water on gelatin in large bowl; stir until gelatin is

dissolved. Add raspberries. (If desired, remove several raspberries and

reserve for garnish.)

Refrigerate gelatin mixture about 15 minutes or until thickened but not set.

6.

Layer half each of the cake pieces, gelatin mixture and yogurt in 3-quart

glass bowl; repeat. Garnish with reserved raspberries. Refrigerate at least

2

hours until firm. Cover and refrigerate any remaining dessert.

Chocolate Trifle

  Ingredients:

  1 chocolate cake mix

  1 box instant chocolate pudding

  1 8 oz container of Cool Whip

  4 toffee bars (I use Hershey's sweet escape)

  Directions:

  Bake the cake mix as directed. Cool completely, and then cut up the whole

cake into small bite-size pieces.

  Make instant pudding and refrigerate. (Do not use sugar-free mix or it

will be too thin.)

  Take the candy and put it in a zippered baggie and crush into small

crumbs.

  Take a glass bowl and alternately place half the cake pieces, followed by

half the pudding, half the Cool Whip, half the candy, and than repeating it

with the candy on top.

  Refrigerate and cover until ready to serve.

Banana Split Trifle

Ingredients:

 1 (3.4oz) pkg each vanilla  chocolate pudding

 4 cups milk, divided

 60 vanilla wafers

 3 bananas, sliced

 6 tablespoons chocolate syrup, divided

 1 (15 oz) crushed pineapple, drained well

 1 (8 oz) frozen whipped topping

 10 maraschino cherries, drained and halved

 1/4 cup finely chopped pecans

Preparation:

Cook pudding using 2 cups milk, following package directions. Refrigerate

and allow to cool. Arrange 30 wafers in bottom of a 2 quart straight-sided

bowl.

Spoon vanilla pudding over wafers. Arrange sliced bananas over pudding.

Drizzle bananas with 3 tablespoons chocolate syrup. Arrange 30 wafers over

chocolate

and bananas. Spoon pineapple evenly over wafers. Spoon chocolate pudding

over pineapple. Spread whipped topping over chocolate pudding. Spreading to

edges

to seal. Cover with plastic wrap, and refrigerate overnight. Before serving,

arrange cherries over whipped topping; sprinkle with pecans. Drizzle a bit

more chocolate syrup over top. 8-10 servings.

All American Trifle Patti's

Patti's All American Trifle uses strawberries and blueberries for the red

and blue. White is the whipped cream.

INGREDIENTS:

 2 (12oz.) containers whipped topping, thawed

 1 5.9 ounce package vanilla instant pudding

 1 whole angel food cake, cut into 1 inch cubes

 Sliced fresh strawberries and blueberries

 Slivered almonds

PREPARATION:

Prepare instant pudding according to package directions. Layer trifle

ingredients as follows from bottom of trifle bowl to top; 1/3 Cool Whip, 1/2

of cake

cubes, 1/2 of pudding, strawberries, 1/3 Cool Whip, cake cubes, pudding,

blueberries, remaining Cool Whip, and top with slivered almonds.
