Re: [CnD] Info About Coffee Makers
Hi Susan Both my husband and I have limited vision. We have a Mr. Coffee Keurig coffee maker. I am not sure if it a mini version or not. There is no buttoms, except for the one that you push to start the brewing. We use 1/2 cup measuring cup to fill the water resorvour and then add just a little bit more. There is a ridge just below the top where you fill the water to. It is very easy to use. Re: [CnD] Cooking bacon in the microwave
A friend taught me years ago that there are two basic ways to prepare bacon -- cooking it and frying it. To make the classic bacon that is crisp and not rubbery or dry, you have to fry it, which means cooking bacon in bacon fat. Unfortunately this is mutually exclusive with keeping it grease free, so it's difficult to do in a microwave. -Original Message- From: cookinginthedark-boun...@acbradio.org [mailto:cookinginthedark-boun...@acbradio.org] On Behalf Of Abby Vincent Sent: Saturday, July 21, 2012 10:49 PM To: cookinginthedark@acbradio.org Subject: Re: [CnD] Cooking bacon in the microwave Frying or baking produces the best crispy bacon. I do mine in a microwave on one of those slot thingys. It does what it says ... allows the fat to drain off the bacon. Cooking with paper towels does the same thing, but you get more fat. The key is timing. The standard time is a minute per slice. It depends on how thick the bacon is and whether you like it chewy or crisp. There is a short window between crisp and burned. [CnD] Lora's Summer Squash Casserole
Lora's Summer Squash Casserole (Lora Leggett 2012.07.16) 1 tablespoon butter 3 small yellow squash or whatever you have 1 medium onion, I used half of a Spanish onion 1 medium green bell pepper, I used half of a very large one 1 teaspoon garlic powder 1 teaspoon sweet basil 1 ((10 3/4) can cream of celery soup, undiluted 1 cup shredded Mozzarella cheese Preheat the oven to 350 degrees. If desired, peel the squash and cut off the very tips of each end. On a cutting board, slice the squash and chop the onion into bite size pieces or slice it if you like. Rub the butter on the bottom and sides of an 8 inch square glass casserole or desired baking dish. Place the squash and onion on the bottom of the pan in one layer if possible. You can put the rest on top. Sprinkle the garlic powder and sweet basil over the vegetables and gently mix them around in the casserole so the herbs will be equally distributed. I did not measure these herbs and ran out my basil bottle. A teaspoon may not be enough for your taste. Pour the cream of celery soup over the vegetables and gently mix again to get it to spread evenly. It is important because you are not adding water or milk to dilute your sauce. Pour the Mozzarella cheese on top and spread evenly. Place the casserole on a cookie sheet and use oven mitts when putting it into or taking it out of the oven to avoid quick temperature changes to your casserole or burning yourself. .Bake 1 hour at 350 degrees. Remove casserole on cookie sheet from oven and allow to cool at least 15 or 20 minutes before serving. ___ Cookinginthedark mailing list Cookinginthedark@acbradio.org http://acbradio.org/mailman/listinfo/cookinginthedark

Hardware eventually fails; software eventually works, no amount of band width can fix poor design Jude jdashiel-at-shellworld-dot-net http://www.shellworld.net/~jdashiel/nj.html -- Forwarded message -- Date: Sun, 22 Jul 2012 02:24:05 From: arnold molotsky zmana...@hotmail.com To: undisclosed-recipients: ; Subject: FW: LEMON PEELS DON'T WASTE THAT LEMON PEEL! Good info on using the whole lemon vs. only the juice... Lemon productions became more and more abundant around the world because of its nutritious contents. Lemons are used in many different ways in lemon industries and factories, but not among households. How do you eat or taste lemon in your house? Probably, you do not know how to apply lemon the right away. Do you just squish a few drips to your whiskey, vegetable salad, bread, ice cream, roasted meat, cake, baked chicken, fruit drinks, or to your other favorable dishes? If so, what a waste! Here, I'll tell you the real use of lemon!I'm sure you know how nutritious a lemon is. But you may only know how to use it as a simple seasoning, as most people do, and not as a side dish. You think that only the squished juice from lemon is used, while the lemon peel is thrown away. Yes, you think that you only need that sour, citrus taste of the lemon's juice, is that right? However, we found out that many professionals in restaurants and eateries are using or consuming the entire lemon and nothing is wasted. How can you use the whole lemon without waste? Simple...place the lemon in the freezer section of your refrigerator. Once the lemon is frozen, get your grater, and shred the whole lemon (no need to peel it) and sprinkle it on top of your foods.Sprinkle it to your whisky, wine, vegetable salad, ice cream, vegetable soup, chicken soup, curry soup, noodles, spaghetti sauce, rice, sushi, meat loaf, sausage, fish dishes, etc. It doesn't matter whether it's a Chinese dish, Italian dish, French dish, African, Indian, Japanese, Korean, or Latin American dishes, you just name it. All of these foods will unexpectedly have wonderful taste, something that you may have never tasted before in your life. You don't believe me? Just try it and you will agree with me. Everything will certainly taste great! What's the major advantage of using the whole lemon other than preventing waste and adding new taste to your dishes? Well, you see lemon peels contain as much as 5 to 10 times more vitamins than the lemon juice itself. And yes, that's what you've been wasting. But from now on, by following this simple procedure of freezing the whole lemon, then grating it on top of your dishes, you can consume all of those nutrients and get even healthier. It is very good that the PYRO-ENERGEN is also the taste for all people. It's also good that lemon peels are health rejuvenators in eradicating toxic elements in the body. So place your lemon in your freezer, and then grate it on your meal every day. It is a key to make your foods tastier and you get to live healthier and longer! That's the lemon secret! Re: [CnD] Cooking bacon in the microwave
Randy, In the Blind Mice Mart store in the blind Mice Mega Mall, www.blindmicemart.com a bacon cooker is sold for the microwave. There is a large one and a small one. The large one holds 7 to 9 slices of bacon. A smaller one holds about 4 to six slices. Do a search for Microwave bacon and it will pull both of them up. These can also be stacked to cook more bacon at a single time. Both drain off the grease while the bacon cooks. We will be recording a microwave show featuring the new Magic Chef Talking microwave and some of the things I will be doing is cooking eggs and bacon in it among some other stuff. The show will run in about 2 to three weeks. As the other wonderful members on the list have pointed out, the starting point for bacon is about 1 minute per slice. This varies with the bacon, thin or thick, and with the individual microwave. Two microwaves with identical wattage will most likely cook differently. You will need to experiment a little and cook some bacon as the wonderful members have suggested. When I use the bacon cooker, I line it with a couple of paper towel. Then, as Brittany and others do, I line up my bacon, about 8 slices, and then cover with another paper towel. I microwave it for 7 minutes and let it stand in the microwave for about 4 o 5 minutes more. Remember, foods cooked in a microwave will continue to cook even after it has stopped. The microwaves are still active. This method produces the bacon just as I like it, well for microwaved bacon. Go ahead and grab yourself a plate, line it with paper towels, put some bacon on it, and then cover. Start with the 1 minute per slice and after it is done, let it stand in the microwave for another minute. Then remove it and see where it is at... If it is too crisp, then reduce your cooking time a little bit...if it is not crisp enough, increase your time a little. After a couple of try you will figure out exactly what amount of time is needed for your bacon. Plus, you get to eat the experiments! Bacon is Good!! Re: [CnD] cooking rice
This is something I'm trying to figure out right now. I make the rice and sauce packaged stuff in the microwave all the time, and they require two cups of water to a packet of rice, and it takes about 12-14 minutes in the microwave to get it cooked. My suspicion is that it's a one cup amount, using normal ratios, but I want to open a packet into a measuring cup at some point to verify this. The time is good, though, and it should work fairly well. I assume you're talking white rice -- brown rice takes longer and usually requires a slight bit more of water, about 2¼ cups of water to a cup of rice. -Original Message- From: cookinginthedark-boun...@acbradio.org [mailto:cookinginthedark-boun...@acbradio.org] On Behalf Of Allison Fallin Sent: Sunday, July 22, 2012 2:00 PM To: cookinginthedark@acbradio.org Subject: [CnD] cooking rice Hello, Has anyone tried cooking long-grain rice in the microwave? Re: [CnD] stuffed cabbage
This is how I make stuffed cabbage. It's time consuming but well worth the effort! To make the stuffing: Cook 1 cup of long-grain white rice. Cook 1 pound ground beef. Remove from skillet and, in drippings, or olive oil, cook 1 medium-size onion, chopped, until golden and smelling delicious! Combine cooked rice with cooked meat and onion and add 2 TBSP. ketchup. Season with lots of freshly ground pepper, and set aside. Bring large pot of water to boiling. A pasta pot works well, since the insert allows you to remove the cabbage as needed in order to remove the leaves from the head. Cut around the core of a large head of cabbage, then add to pot of boiling water. Cook for a few minutes, remove the cabbage, and peel off as many of the whole leaves as you can easily remove. At the core end of each leaf there's a thick stem embedded in the leaf, shave this stem area with a paring knife, so the leaves will fold easily and cook more evenly. Line a heavy, oven-proof pot with the outermost cabbage leaves -- the dark green ones that are less tasty. Allow the lining to cover the sides of the pot as well, and save some leaves to cover the top of the cabbage rolls once they have nbeen completed. Now, working with one cabbage leaf at a time, place a few tablespoons of the filling in the center of the leaf. Fold in the sides, then roll up the leaves to form a tidy package. Continue in this way until you have used up all of the filling and all of the leaves. If it becomes difficult to remove cabbage leaves from the head, just return to simmering water for a few minutes until the leaves come off easily. Cover all of the packets with more cabbage leaves -- this insulates the cabbbage rolls as they bake. Now, combine 3 cups of water or stock with a teaspoon or so of salt and 2-3 TBSP. ketchup and 2 TBSP. olive or sunflower oil. Pour this mixture over the cabbage rolls in the pot. Cover the pot tightly, and bake the cabbage rolls in a 350-degree oven for an hour. Remove from oven, and remove cabbage rolls to a platter, discarding the cabbage leaves that lined the pot. Serve with sauteed onions and dollops of sour cream. If you are feeding vegetarians, make the stuffing without meat. Just substitute sauteed onion and mushrooms, raisins if you want, and at least 1 tsp. paprika for the ground beef. Enjoy! Re: [CnD] cooking rice
Hi, I pasted the recipe directly into the message. I don't know why it didn't come through. I'll just type it in this time, and hope that you can access it. In a large glass measuring cup, combine 2 cups raw long-grain rice (not instant!) with 3-1/2 cups stock or water, 1-1/2 tsp. butter or olive oil, and salt and pepper or other seasonings to taste. Cook, uncovered, on high (full) power for 10 minutes. Do not stir the rice at any time during cooking. Then, cook on medium-low power for 15 minutes longer, again not stirring and not covering the container. Taste for seasoning and fluff with fork. Enjoy! If so how did you do it and how did it turn out? I can do it on the stove but would like to be able to muse the microwave if that's possible.
