Favorite Family Desserts
Carrot Cookies
1 cup shortening (part soft butter)
3/4 cup sugar
2 eggs
1 cup mashed cooked carrots
2 cups Gold Medal Flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup shredded coconut
Orange Butter Icing (see below)
Heat oven to 400 degrees. Mix shortening, sugar, eggs and carrots. Blend in 
flour, baking powder and salt. Stir in coconut. Drop dough by teaspoonfuls 
about 2 inches apart onto lightly greased baking sheet. Bake 8 to 10 
minutes, or until no imprint remains when touched lightly. Immediately 
remove from baking sheet. Cool. Frosting with Orange Butter Icing.

Note:
If using self-rising flour, omit baking powder and salt.
Makes 4 dozen cookies.
Orange Butter Icing
3 tablespoons soft butter or margarine
1 1/2 cups powdered sugar
2 teaspoons grated orange peel
About 1 tablespoon orange juice
Blend butter and sugar. Stir in orange peel and juice. Beat until frosting 
is smooth and of spreading consistency.

[CnD] need a rhubarb bar recipe please

Hi, I'm looking for a rhubarb bar recipe that doesn't use oatmeal in the
crust. I think the one I had before had powdered sugar and flour and not
sure what else. If anyone can help me out I'd greatly appreciate it. Also
any rhubarb bread or coffee cake recipes would be great, since I just got
some rhubarb yesterday. Does anyone know how long it will keep or how to
freeze it? Thanks.

I bought one pound of chuck tender steak. The directions in the enchiladas
calls for shredded beef. I have some tex-mex seasoning which I intend to
use. The question is, do I cut the meat into shreds before cooking it? Or
cook the meat first and then shred it? Should I shred the meat in a food
processor or cut it up as much as possible with a knife? In my estimation
either way has good or bad points to the process.

 

Just thinking about this recipe makes me hungry.

*If thre is not enough of the raisins, nuts, etc then just use what you
have. It makes no difference to you. :)



Heat oven to 375 degreesF. Mix brown sugar, margarine, shortening, coffee,

egg, baking soda, salt, cinnamon and nutmeg. Stir in remaining

ingredients. Drop dough by rounded teaspoonfuls about 2 inches apart onto

ungreased cookie sheet. Bake until almost no indentation remains when

touched, 8 to 10 minutes. Immediately remove from cookie sheet. About 4

dozen cookies.

I'm seeing 1/2 cup butter or shortening listed in the ingredients, as well
as1/4 cup milk or water.  I suspect he substituted coffee for the milk or
water.  Just a guess, though!

Italian chicken casserole (my way)

half a chicken breast, skinned and deboned)
Cut into bite size pieces
1 medium onion (cut into rings)
four small potatoes ( cut into pieces)

Layer the onions rings  in a sprayed casserole dish. Quarter the potatoes
Lay chicken pieces among potatoes.
Put a slice of fresh garlic   on chicken pieces.
Add a little salt, fresh ground black pepper, oregano, crushed red pepper 
and basil to taste, over dish. If I had fresh tomatoes I would have use 
them, but seeing I didn't I drain the juice off a can of sliced tomatoes 
and layered the tomato slices over everything.

Will bake at 350
Degrees F for about 45  to a hour or until chicken and potatoes are done.

[CnD] Chili Dog Casserole

Chili Dog Casserole

2 (15-ounce) cans chili with or without beans

1 pound hot dogs

10 ( 8-inch ) flour tortillas

1 (8-ounce) package shredded Cheddar cheese

Spread 1 can of chili over bottom of

9-by-13-inch baking pan. Roll tortillas around hot dogs and place on

top of chili, seam side down. Spoon remaining can of chili over top

of filled tortillas. Sprinkle cheese over all. Cover tightly with

foil and bake at 425 degrees for 30 minutes. Let cool slightly and

serve



NOTE:  I think I will use corn tortillas instead because I like them better.

I mix everything in a big bowl with my hands.

1 lb. hamburger
1 tsp. House Seasoning (garlic powder, black pepper and salt mix) 1 medium
onion, chopped 1 medium green pepper, chopped 1 cup grated cheddar cheese 
2

tbsp. Worcestershire sauce 1/2 cup sour cream 1 cup crushed crackers
(recommended, Ritz) 1 tsp. seasoned salt 2 slices white bread sauce recipe
follows

Preheat oven to 350 dg. F. Mix all of the ingredients together, except the
bread slices and sauce. Shape into a loaf. Line a 1-1/2 qt. loaf pan with
the bread slices. Place meat loaf on top. Bake loaf for 45 minutes. The
bread absorbs the grease and should be discarded after loaf is removed 
from

oven.

Sauce:

1 (10.75 oz.) can cream of mushroom soup
1 cup milk
1-1/2 cups grated cheddar cheese
chopped onion, optional
1 bunch fresh parsley leaves, chopped, optional Heat soup and milk over
medium heat; add the cheese. Add the chopped onions and parsley to the
sauce, if desired. Pour the sauce over the meat loaf or pass at the table.

This is such an easy bread to make just mix and bake, no need for any 
kneading, shape into one large or a few small loaves or drop the dough from 
a spoon onto a greased cookie sheet to make biscuits.




Ingredients:



Yield:

1

loaf



2 cups original

Bisquick baking mix

3/4-1 cup shredded

cheddar cheese

3 tablespoons grated

parmesan cheese

1/2-1 teaspoon

garlic powder

1/2 cup

water,

plus

1 tablespoon

water



TOPPING

3 tablespoons melted

butter

1/2 teaspoon

garlic powder

(or to taste)

1 teaspoon italian seasoning (or to taste)

1 teaspoon

dried parsley

(or to taste)



Directions:

Set oven to 400°F (convection bake if possible).

Grease a foil-lined baking sheet.

In a large bowl mix/toss together the baking mix with grated cheddar cheese, 
Parmesan cheese and garlic powder.

Add in the water, and mix with hands until well combined.

Shape the dough into one oval-shaped loaf, or even better into smaller oval 
shaped balls, or drop heaping tablespoonfuls onto the baking sheet for 
biscuits.

Transfer to cookie/baking sheet.

Brush the tops and sides with melted butter; sprinkle with garlic powder, 
Italian seasoning and dried parsley.

At this point, let dough rest, covered loosely with plastic or a clean tea 
towel in the refrigerator for 20-25 minutes before baking.

Remove from fridge and bake for 25 minutes, or until brown in color (bake 
less time for smaller size balls or biscuits, the dough will spread when 
baked).

Remove from oven, cut in slices, serve warm.

1 Yellow cake mix(I used chocolate)

4 Eggs

3/4 C oil

1 C Milk

1 can Carmel or Coconut Pecan Frosting

Mix all ingredients together.

Pour into a Bundt pan sprayed with Pam.

No oven temperature is given; but I baked it at 350.

Bake about 1 hour.

*This cake is VERY moist
