2 tablespoons diced white onions



3 ounces provolone cheese, chopped4 slices Kraft fat-free Swiss Cheese
Singles, quartered



4 slices Kraft fat-free Mozzarella singles, quartered



1 ½ teaspoons white vinegar



¼ heaping teaspoon salt



1.   Thaw the spinach and place it in a medium saucepan over medium-low
heat with the onion. Heat for 7 to 10 minutes or until the liquid begins to
bubble. Drain.

2.   Add the remaining ingredients to the saucepan and heat for an
additional 5 to 7 minutes or until smooth and creamy.

Combine all of the ingredients in a small bowl.

12 ounces Sprite (1 can)



3 lime wedges (1/8 of a lime each)



¼ cup of cherry juice (Libby’s Juicy Juice is best)





1.   Feel a 16-ounce glass 2/3 full with ice.

2.   Pour Sprite over the ice.

3.   Add the juice of three lime wedges and drop them into the drink.

4.   Add the cherry juice and serve with a straw.

2 ¼ cups vanilla ice cream



¼ cup whole milk



2 tablespoons creamy peanut butter





Peanut Butter Fudge Shake



2 ¼ cups vanilla ice cream



¼ cup whole milk



2 tablespoons creamy peanut butter



1 tablespoon chocolate fudge



1.   Combine the ingredients for the shake of your choice in a blender.
Be sure to pack the ice cream into the measuring cup when you measure it
out. Blend everything on medium speed until smooth.

2.   Pour the shake into a 16-ounce glass, add a straw, and serve it up.
Pop the shake into the freezer for 10 to 15 minutes firm it up if it’s too
runny.

Chicken



2 skinless chicken breast fillets



1 tablespoon salt



2 cups water



1 tablespoon extra light olive oil





Alfredo Sauce



½ cup (1 stick) butter



2 teaspoons minced garlic



2 cups heavy cream



½ cup whole milk



½ cup grated Parmesan cheese



1 teaspoon salt



½ teaspoon coarsely ground black pepper



1 pound uncooked rotini pasta



2 cups finely shredded mozzarella cheese



1.   Cover the chicken with plastic wrap and pound them to about ½-inch
thick with a kitchen mallet. Dissolve the salt in the water, add the
chicken, and cover and chill for exactly 1 hour. When the chicken is done
marinating, remove it from the brine, rinse it off, and blot it dry. Heat up
1 tablespoon of oil in a medium saute pan over medium-high heat and Cook the
chicken in the pan for 3 to 4 minutes per side, or until cooked through.
Cool and chop into bit-size chunks.

2.   Make the Alfredo sauce by melting the butter in a medium saucepan
over medium-low heat. Add the garlic and cook for 1 minute. Add the
remaining ingredients and increase the heat to medium. When the sauce begins
to boil, reduce the heat and simmer for 12 minutes, or until thickened.

3.   Cook the pasta in 3 to 4 quarts boiling water for 8 minutes, or
until tender. Drain.

4.   Preheat the broiler to high.

5.   Pour the pasta into a 9 x 13-inch baking pan. Pour the Alfredo
sauce over the pasta and toss to coat all of the pasta. Sprinkle the chicken
over the top of the pasta, then cover with shredded cheese.

6.   Broil 2 to 3 minutes, or until the cheese begins to brown. Prepare
modestly to accept all kudos.

Ingredients



1 pound chicken tenders



1 cup all-purpose flour



1 cup milk



½ teaspoon salt



½ teaspoon black pepper



4 tablespoons olive oil-divided use



½ green bell pepper sliced thin



½ red bell pepper sliced thin



½ orange bell pepper sliced thin



½ medium sized red onion sliced thin



1 clove garlic sliced thin



1 pound pasta cooked according to package



¾ cup wine or (Substitute with low sodium chicken broth)



¾ cup heavy cream



¼ teaspoon Italian seasonings





Instructions



Place Flour, salt, and pepper into a shallow dish and mix well with a fork.
Place milk in a shallow dish. Dredge chicken first in flour, then dip into
milk, then dredge again in the flour.



Place breaded chicken on a rack and allow to rest 10 minutes before cooking.
While the chicken is resting, cut peppers, onions, and garlic.



Saute peppers, onions, and garlic in a heavy bottomed skillet over medium
heat with 2 tablespoons of olive oil.



Season peppers, onions, and garlic with a light sprinkling of salt. Saute
until peppers begin to brown. Remove from skillet.



Place remaining 2 tablespoons of olive oil in skillet. Place chicken in
skillet. Cook for 5 to 7 minutes on each side until the chicken has browned
on both sides. Remove chicken from pan.



Deglaze the pan by adding white wine to the pan and add Italian seasoning
blend.



Scrape the bottom with a spoon scrapping the browned bits off the bottom of
the pan. Add heavy cream and mix well. Return cooked vegetables to the pan
and stir. Add cooked pasta to the skillet.



Plate the pasta and sauce, placing a few pieces of cooked chicken with each
plate.

Serves: 6



Ingredients



2 pounds chicken tenders



2 cups flour



¼ cups corn starch



2 teaspoons sugar



2 teaspoons salt



½ teaspoon baking powder



½ teaspoon baking soda



½ teaspoon onion salt



½ teaspoon paprika



¼ teaspoon ground black pepper



16 ounces club soda



Oil for frying





Instructions



If you are not using a fryer, heat up 8 cups of vegetable oil in a heavy pot
until the temperature reaches 350 degrees. Make the batter by combining
flour, corn starch, sugar, salt, baking powder, baking soda, onion salt,
paprika, ground black pepper. Stir to combine all dry ingredients.



Add club soda to dry ingredients. The batter will foam, continue to stir.
Drop pieces of chicken into the batter. Coat chicken with batter, drop into
hot oil. Fry chicken for 2 to 3 minutes on each side or until the batter is
golden and the chicken pieces begin to float to the top of the oil.



Drain chicken on a wire rack.
