Fruited Pork

1 (2 pound) boneless pork loin roast

1/2 teaspoon salt

1/4 teaspoon pepper

1 1/2 cups mixed dried fruit

1/2 cup apple juice

Place pork in 3 to 4 quart slow cooker. Sprinkle with salt and pepper. Top
with fruit. Pour apple juice over top. Cover; cook on low for 4 to 6 hours,
or until pork is tender.

Makes 6 servings.  Mama's Corner.

[CnD] Scrambled Eggs

Scrambled Eggs

1/2 cup finely chopped sweet red pepper

6 green onions, thinly sliced

1/4 cup butter

8 eggs

2 tablespoons milk

1/2 teaspoon salt

Pinch of white pepper

Saute red pepper and green onions in butter over medium heat until
vegetables are soft but not brown. Beat eggs with milk, salt and pepper. Add
egg mixture all at once to vegetable mixture. Reduce heat to low and cook,
gently stirring, as eggs begin to thicken until eggs are creamy and softly
set. Serve immediately.

Makes 4 servings.  Mama's Corner.

[CnD] CHILI CHEESEDOG BOATS

CHILI CHEESEDOG BOATS

1/4 cup butter, melted

2 garlic cloves, minced

2 Tbsp parsley, finely chopped

8 slices cheddar cheese

1 15-ounce can chili

8 hot dogs

 

Preheat oven to 350F/180C.

Place the 8 hot dog buns in a 9x13 baking dish, then cut a rectangle in each
hot dog bun, making sure to stay 1 centimeter from the edges.

 

Push down on the bread cut-out and compact this portion of the bun tightly
into the bottom of each bun, making sure to press down on the bottom edges
as well. This will help create a larger space for the fillings and reduce
mess.

 

Mix the butter, garlic, and parsley in a small bowl, then brush the buns and
their hollowed insides with the garlic butter.

 

Bake for 5 minutes to toast the buns as well as help the sides of the buns
firm up so they don't collapse under the weight of the fillings.

 

Place a slice of cheddar cheese inside each bun, then spoon a bit of chili
inside each one.

 

Slide the hot dog snugly on top of the chili, then top with more chili.

 

Bake for 20-25 minutes, until the cheese is golden brown and the chili has
started to brown.

 

Slice the hot dog's boats along their connected seams, then enjoy!

[CnD] MINI SHEPHERD'S PIES

MINI SHEPHERD'S PIES

Looking for a tasty twist on the classic shepherd's pie? These delightful
mini pies are sure to please.

PREP: 10 minutes

COOK: 1 hour

Makes 16 mini pies



1 onion, diced

Half of a red bell pepper, diced

1 tablespoon oil

1 pound ground beef

1 can Campbell's Condensed Cream of Mushroom Soup

1/4 cup milk

1 teaspoon Worcestershire sauce

1/4 teaspoon salt

1/4 teaspoon pepper

1/2 teaspoon garlic powder

1/4 teaspoon dried thyme

1 1/2 cups frozen mixed vegetables

4 cups mashed potatoes

Dried parsley

1 1/2 cups shredded cheddar cheese



In a large skillet, saute the onion and pepper in oil until softened.



Add in the ground beef and cook, stirring frequently, until the beef is
cooked and no longer pink. Drain off

excess fat if desired.



Add in the Campbell's Condensed Cream of Mushroom Soup, milk, Worcestershire
sauce, salt, pepper,

garlic powder, and thyme, and cook for several minutes, stirring regularly.
Add additional milk if necessary.



Add the frozen vegetables and cook for 3 to 4 minutes, stirring as they
cook.



Use jumbo-sized foil baking cups (3 1/2 inches in diameter) and place ¼ cup
of the veggie/beef mixture into

the bottom of each baking cup. Fill your ¼-cup sized measuring cup with
mashed potatoes and place ¼ cup

of mashed potatoes on top of the beef and veggies in each baking cup.
Sprinkle the tops with dried parsley.



Place the baking cups on a large baking sheet and bake in a 350 degree oven
for 20 to 25 minutes.



When the shepherd's pies are finished cooking, remove from the oven and top
each one with a pinch of

cheddar cheese. Pop back in the oven for 5 more minutes to melt the cheese

SKINNY AMBROSIA FRUIT SALAD

This Skinny Ambrosia Fruit Salad combines 5 types of fruit with a sweetened
Greek yogurt sauce - the perfect {healthier} way to dress up your ordinary
fruit salad!

Serves: 6 cups

 

1 (20 oz.) can pineapple chunks, drained

2 c. green grapes

1 c. strawberries, quartered

1 c. blueberries

1 can mandarin oranges, drained

1 c. plain Greek yogurt

2 Tbsp. Truvia Sugar Blend

1/4 tsp. vanilla

 

Combine fruits in a large bowl and mix gently, being careful not to crush
mandarin oranges. 

In a separate bowl, combine Greek yogurt, Truvia Sugar Blend, and vanilla
and mix well.

Gently fold Greek yogurt sauce into fruit salad. Enjoy!
