Noone on this list is in or from Senegal but if they were, you'd have plenty of interesting recipes. Only thing is, Senegal likes their coffee strong and their fish spicey. [CnD] Tilapia in Mustard Cream Sauce
Tilapia in Mustard Cream Sauce 4 (6-ounce) tilapia fillets 1/2 teaspoon chopped fresh thyme 1/2 teaspoon freshly ground black pepper 1/4 teaspoon salt Cooking spray 3/4 cup fat-free, less-sodium chicken broth 1 ounce portobello mushrooms, thinly sliced 2 tablespoons whipping cream 2 tablespoons Dijon mustard Sprinkle fish with thyme, pepper, and salt. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add fish; cook 1 minute on each side. Add broth, and bring to a boil. Cover, reduce heat, and simmer 5 minutes. Add mushrooms; cook, uncovered, 1 minute or until mushrooms are tender. Remove fish from pan; keep warm. Add cream and mustard to pan; stir with a whisk until well combined. Cook 1 minute or until thoroughly heated. Serve sauce over fish. Makes 4 servings. Enjoy. Tilapia with Jasmine Rice This is very good and is so easy to make. A nice way to get some fish in the diet. Need to watch the rice carefully so it doesn't get too dry. I might add a little more water next time I cook it. Recipe By : Shirl Parsons of Cape Carteret, North Carolina Serving Size : 2 Preparation Time: Categories : Fish and Shellfish Amount Measure Ingredient -- Preparation Method 3/4 cup water 1/2 cup uncooked jasmine rice 1 1/2 teaspoons butter 1/4 teaspoon ground cumin 1/4 teaspoon seafood seasoning 1/4 teaspoon pepper 1/8 teaspoon salt 2 tilapia fillets (6 ounces each) 1/4 cup fat-free Italian salad dressing In a large saucepan, bring the water, rice and butter to a boil. TALAPIA WITH PESTO Pesto: 2 bunches of fresh basil, chopped 1/2 cup olive oil 1 garlic clove, minced 1 package Ricotta cheese Fish Dish: 4-6 pieces tilapia pesto sauce (from above recipe) 1-2 large ripe tomatoes, 1/2 inch sliced Pesto: In a blender, combine all ingredients and puree. Continue to add more olive oil if sauce is too dry for your preference. Keep in mind you want the pesto sauce to be more on the thicker side. Fish: Arrange fish in a baking dish or pan. Spoon pesto sauce over each fillet of fish. Place a 1-2 slice (s) of tomato on top of each fillet. Bake at 350°F for 20-30 minutes or until fish is cooked throughout. Does anybody have any interesting recipes using tilapia? I don't know if I have ever seen any and have quite a lot of it in my freezer to use. Today I pan fried it with seasonings. It tasted fine that way but I just thought with all the salmon, shrimp and tuna recipes out there it should be possible to find tilapia recipes too. Hi All, That does sound wonderful, but right now I don’t have any packs of onion soup mix. I do have raw beans, I am not sure what kind, they could be kidney beans or whatever. I do have raw onions, so I put a couple of them into my crockpot right at the beginning of cooking so they have plenty of time to cook down and smell up the kitchen, haha. Then I add a few spices such as garlic salt and whatever I can find. Out of respect to other people living here, I don’t go heavy on the chili powder or taco seasoning. I save them for chili. But it really comes out good with the raw onion cut up very small.
