When weighing my flour, I use a nice wide container. I make less of a 
mess that way than using my cups.

difference of eight grams, which sounds kinda serious? Is there actually that 
much differences in weight between various brands of all-purpose flour? and if 
so, how the heck is someone supposed to get accurate measurements if you don't 
know what brand you're using?

I will say that when I do weigh my flour with a scale, I don't need to add near 
as much extra flour or liquid to a recipe, maybe just a little drib or drab, so 
for me, it does seem a bit more accurate than using the cups.

Fortunately, many recipes give you both cup and weight measurements.
It's the ones that don't that give me fits.

Hi folks

[CnD] Looking for bread machine recipes and/or advice?

HI folks,


Yesterday, I just got a bread machine. It's only a little 2 pound loaf 
Amazon basics model, but I love it. Easy to use menus, and actual 
buttons instead of a touch screen that needs to be marked up. And it 
takes up very little space.



Does anyone have any easy bread machine recipes or advice to share? How 
about resources to find recipes for a bread machine?

I haven't tried Aira yet, but I can set my power air fryer without help. 
Now if I need to check what's on the screen, there of course i need a 
set of eyeballs. :)

There are other things they do very well that aren't cooked all day and aren't 
soup/stew items. Two of my favorites are making my own "Trash" (Now more 
commonly known as Chex Mix) and the amazing Crock Pot Pizza recipe I found on a 
BBS years ago. The Trash recipe involves an open crock, while the pizza recipe 
only takes about an hour and a half to melt the cheese and warm the meats and 
other toppings.

I think after Thursday night especially for things like chicken and soups and 
stews and things like that I’m just going to bite the bullet and start using my 
crockpot from now on for those things LOL this way I don’t have to keep 
monitoring the temperature all the time for things and just let it cook over 
the course of a day and then when I get home from work or something I’ll have a 
whole meal

Yep, that sounds exactly like my power air fryer oven, even the settings 
and placement. I love it!!! I can have rotisserie chicken and not have 
to leave the house. I have the temp and time settings marked, the French 
Fry setting since this works for so many different foods, the rotisserie 
setting, and of course the on/off button marked.

automatically set at 370 degrees and the time at 15 minutes. It's a flat screen 
and there's a big round blue light near the bottom in the center where my wife 
put a bump dot for me. That's the power button. When you push it the screen

Our Power Air Fryer Oven has 5 trays that you can put in it for massive amounts 
of food.
It also has a rotisserie rod, several kabab skewers and a rotating basket for 
things like fries, onion rings, shrimp etc.
We use it every day.

The model I saw couldn't be marked in any way that would help. The dials don't 
come up with the same information each time. They change by what you are doing. 
I didn't check to see if it could be run with a smart phone ap. By the time I 
found the ap, set it up, got it going, my food would be burnt offerings if it 
were running or spoiled in its raw state while I searched to find the proper 
response. I really wanted that Emerald oven and worked a couple hours with a 
sighted friend before giving up on it and returning it. With limited sight it 
might be possible to use that oven, but not for a totally blind person.

really hope the thing is doing what its supposed to be doing.


It'd be great if there were an app operated model or even a talking air fryer 
oven, but I don't see this happening.

If it's anything like my power air fryer model, the person will have to 
actually hit the power button to turn it on before things are visible on 
the screen to be marked.



And,, just a heads up ... my air fryer's touch screen is the most 
sensitive thing I've ever seen! It can feel a bit nerve racking before 
you get used to using it, just take the time to hit the right setting 
you want, and things will be fine.

You'll need sighted help, but you can mark the touch screen of an Air 
Fryer the same way you would mark the touch screen of any other appliances.

[CnD] Accessible kitchen scales

I may have asked this before a long time ago. But can anyone recommend a 
good kitchen  scale which is usable by a totally blind person? I'd like 
to have a talking scale, but the one that I tried was so easily 
breakable that it was pathetic.

Actually, bump dots do work. This is how I had my sighted nephew label mine, 
and for almost a year, its worked perfectly.

Also, all the accessories I ordered with mine work perfectly with my Power Air 
Fryer. I’m especially glad I got the rotisserie set becaue these rotisserie 
chickens are delicious!

but I ordered mine online and not over the phone. Not sure if that makes a 
difference.

Anyway, it is a purchase I so do not regret making. We are probably gonna wear 
our poor Power Air Fryer out, we use it so much daily.

I can't second this enough. i also got a few extras, but it was worth 
it. It makes the best food and in less than half the time it takes a 
regular oven. And it does not heat up the kitchen.

[CnD] Accessible durable & affordable kitchen scales

What are the best accessible kitchen scales for a totally blind person? 
I have tried some talking scales, and found them to be so blasted 
delicate that they break if you sneeze on them. I don't know if any 
braille scales exist, but if they do, they probably cost hundreds of 
dollars that I don't have to spend.

Truthfully though, while there are a lot of modes you can choose from
(beans, rice, yogurt, soup, etc), more often than not, everyone uses
for the most part the manual option.
With the Bluetooth app, I am able to adjust pressure cooking time,
high or low pressure, select to start right away or delay start or
even select a time for it to start the cooking process. Say for

how long it's been on the warm function too. I know for example it

hard or soft I want them to be. So I'll just tell Siri to set a 75
minute timer. 60 minutes for under pressure and say 15 minutes for it
to get to pressure, but that will fluctuate depending on what you're
cooking and how much water you've got in the IP or if you want to use
a shortcut of already pouring in boiling water and so on.
Anyway, with the app, I can peak in and see how much time is left or
if a recipe calls for a  slow release, the app again, will also say
how long it's been on warm if you don't want to use a timer.
My sighted wife over the holidays was using the 8 quart IP we also
have that doesn't have any WIFI or Bluetooth and out of habit from
upstairs, she launched the iOS app from her iPad to check the status
and was reminded that it wasn't the Bluetooth one she was using. She
grumbled all the way downstairs to check.
So again, it's great having a chart to know what the physical buttons
do, but nobodies really talked about what you can actually do or
access from within the iOS app.

Oh you're right  there are many that go, new, for over $150 ... or more!
YIKES! That is too darned expensive for me, too, also on a fixed income.


I'm totally blind so as long as it isn't white I don't care much about
color. And I am lucky that my KitchenAid mixer was a Christmas present
that came with a couple of very nice extra attachments included.


Doesn't matter what you use just as long as you are happy with it,
that's what counts.

Mine does look a lot more like a counter top oven, but as far as I 
know, they all use the same type of air flow technology.


Some people have even called them just small counter top convection
ovens. I don't care what it's called, I just know it works very well so
they can call it what they like.

I have the 8 QT Power Air Fryer oven, and it gets used at least twice each day, 
It really does look like a small counter top oven. if not more. It comes with 
three trays or Air flow racks, a rotisserie, a set of ten skewers, and one 
extra large basket that fits in to the rotisserie slot. I had sighted help to 
label my most used settings on the touch screen, but I will admit that it took 
me quite a while to get used to the touch screen because it is so very 
sensitive.


I believe there may be air fryers that still use buttons and not a touch 
screen, though, but I was not sure if they had the rotisserie feature, and let 
me tell you, I can make wonderful rotisserie chicken. The tough part is finding 
chickens that will fit, so I've eaten a lot of game hens lately. LOL!

Actually I have had very good luck with frozen and fresh cut fries in my Power 
air Fryer oven. I just put them in the rotating basket, but sometime soon I 
will also try them just lying on one or two of the air flow racks and see how 
they turn out. I just use the French Fry setting, which on my Air fryer means 
400 degrees for 15 minutes.

I have done fresh cut fries and potato wedges in my air fryer, and they
turned out great, even the first time while I was still learning to use
the thing.


I have done the wedges  both ways, with or without skin. It can be done.

[CnD] Smoothing out batter?

Hi,


I may have asked this before,  and if so, please forgive the repeat
question. But does anyone have good tips for a totally blind person on
the best way of smoothing out batter, such as cakes or brownies etc, so
that it's as even as possible? If the batter is a really thick one, I
tend to just use very lightly moistened fingers, but what about thinner
batter?


Has anyone ever done a podcast or tutorial on just some very basic
cooking tips, such as what I just asked. That would be a nice thing to
have handy when needed.

The box kind involve less manipulation but more clean-up For the slotted 
measuring cup kind I crack the egg into a cup and pour it into the separator 
with a bowl under it.
The box one lives in the front right corner of the utility drawer. The back 
corner would also work, as long as it's a consistent place.

LOL! I don't even remember the last time anyone in this house used the one egg 
separator I thought we had, it's been that long. So, it is possible that it is 
just buried at the back or bottom of that junk drawer that we all have 
somewhere in the house. No one has needed it it may have disappeared  long time 
ago with no one noticing. It is even possible it was lost in a flood we had 
here two years ago or in the re-packing and moving after that flood.


But I will definitely buy one or two ASAP!

That would be a good idea, but what i needed from the egg was the yolk, 
not the whites. I don't think you can buy cartons of egg yolks.

The box kind involve less manipulation but more clean-up For the slotted 
measuring cup kind I crack the egg into a cup and pour it into the separator 
with a bowl under it.
The box one lives in the front right corner of the utility drawer. The back 
corner would also work, as long as it's a consistent place.

LOL! I don't even remember the last time anyone in this house used the one egg 
separator I thought we had, it's been that long. So, it is possible that it is 
just buried at the back or bottom of that junk drawer that we all have 
somewhere in the house. No one has needed it it may have disappeared  long time 
ago with no one noticing. It is even possible it was lost in a flood we had 
here two years ago or in the re-packing and moving after that flood.


But I will definitely buy one or two ASAP!

Well, after more years than I'm going to say, my trusty old, really old, 
deep fryer has finally gone to cooking heaven. And I was wondering if 
anyone has any experiences with these air fryers I keep hearing about? 
I'm sure that there are none that are truly accessible, but are any of 
these even marginally usable for a totally blind person?

Boy, that steamer sounds really nice. None of my pieces are suitable to
use  on a stove top, but they are oven pieces. I didn't get one of those
steamers, but may look for one to buy next month if these pans work out
well.


Do you mind if I ask what brand are your silicon pieces? I'm just
curious to know what brand people like as I've heard that some brands
are really flimsy and cheap and don't work well. My Marathon Housewares
and Classic Cuisine brands doesn't seem flimsy at all to me, but I admit
I'm not used to bakeware being so flexible and that makes me a tad
nervous. LOL!

cupcakes recently discussed on this list.
More information than you wanted, but I am excited now that I have used the 
steamer and know how well it works. I was a skeptic at first. Then I got brave 
enough to give it a try and became a convert.

The blades are very sharp, so just please be careful when handling them. 
But I already love my processor ... well, at least the reversible 
slicing/shredding blade. The chopper and I still need to learn to get along.



This is for everyone who uses their processor to mix things, and I feel 
like this is a totally stupid question, but do you use the chopping 
blade also to mix?



Between my new processor and my almost new hand mixer, I may actually 
start to cook now. Honestly nowadays I only do it when absolutely necessary.

I just got an early Christmas present of a Hamilton Beach food 
processor, which has three settings, low, hi and Pulse. a 
chopping/mixing blade, and a reversible slicing/grating blade. It also 
has a very nice knob for controlling it on the front with great tactile 
feedback. Until now, the fanciest appliance in my kitchen was the cheap 
Walmart blender. LOL!



Does anyone have any tips/suggestions about using food processors? For 
instance, how to use the chopping blade but not turn the food in to 
mush? Are there special recipes just for food processors?



Basically, I'm a total newbie, so any advice is appreciated.

I always put my item which I am using at the back of the counter or by the 
sink. I never leave a container in the middle of the counter. If this does 
not work put your container which you are using  in a tray.

I'm really surprised that when this topic was discussed a while back, 
nobody mentioned my biggest problem.  That is dropping and/or knocking 
things over. I always try to put the lids back on things when they are not 
actually in use, but I do fear knocking the thing over while I'm reaching 
for the lid to put back on.  Fortunately, I am not a coffee drinker so I 
do not knock mugs over unless they are my reader's when I'm reaching to 
hand her something. Sighted people have this problem to some extent too, 
because my reader says that from actual experience the worst things to 
drop are blueberries.  Isn't it fun to think you have them all, and then 
later when you've forgotten all about them, you step on one so you have a 
blue spot on the floor and your footwear.  Cherry tomatoes and grapes are 
second and third in line.  And have you had the pleasure of trying to 
clean up spilled salad dressing or oil?  What brings this up is that this 
morning I knocked over my container of pistachios while I was nibbling on 
a few.  Well, first I had to put my guide dog in her crate, and my pet dog 
outside because my guide dog is a lab so she thinks vacuum cleaner is in 
her job description.  Then I crawled around for about 15 minutes picking 
up pistachios.  I actually did very well because when the dogs were 
allowed back, I only heard about 8 or 9 crunches. I hope this gives you 
all a good laugh because I really don't think I am the only one who has 
this problem so I think you can sympathize and maybe elaborate on the 
subject.  And I might as well ask a question.  If something like a 
blueberry, pistachio or tomato falls on the floor but has not been 
squashed, do you throw it out or do you wash it of and use it?

I really got to razz my sighted Mom once when she put liquid smoke into a

Losing something you just had in your hand a second ago will drive you 
crazy!

Where did I put it? I have asked myself a million times it seems.

It especially gets on my nerves when we have to stop recording a Cooking 
in the Dark show so I can find what I just had  in my hand...


To help me keep my blood pressure down, I have tried to teach myself to 
put things back where they go after I have used them

I am still trying to teach myself this.
Getting better but I did lose the hot sauce today...

I have taught myself to lean my cooking utensil, spoon, spatula, tongs, 
etc, in the sink...

actually I lean them in the front left and corner of my sink.
That way when I need to grab the utensil, I always know where they 
are...

Heck, once when I was making a meat loaf, I accidentally added a package 
of vanilla pudding...I thought it was my bag of onion and mushroom soup 
mix...
Anyway, that meat loaf was sweet and it was orange! I did not figure out 
why it was that way until after dinner...my wife still won't let me live 
that one down ! (grin)

Hi all.
So sometimes when Im cooking, I forget where I set things down like the 
garlic or a bottle of sauce. The other day I was frying some corn taco 
shells and kept losing the tongs. Sometimes...or most of the time the 
kids will need me for something and I get distracted. Does this happen 
to any of you?

I some times use Venetian blinds with a braille slate. I like the tin one 
because the dots are sharper. I cut each label made from venetian blind to the 
size that I want. Punch a hole in the corner and put an elastic through.  I use 
the label over and over.

went to target and got two bags 12 ounce bags of fresh cranberries. I have

Hello, you absolutely love using a cake mix to make your banana bread with. For 
one thing, it's very moist, dance, and very flavorful.
You don't have to use a banana flavored cake mix to make this recipe. If you 
look on food.com and Betty Crocker.com you will see a chart or you could make 
different variations of this tasty banana bread.
When I've made this bread, I have used both just a plain white cake mix and 
also a French vanilla cake mix. One thing I did to it though that was a little 
different as a variation was I added a little bit of dried cherries.
The three times I've made this banana bread, I've made it in a Farberware 9 x 5 
x 2.7 loaf pan. Check out those two websites, they should have the charts for 
the variations. You could use cherry chip, banana, yellow, white, French 
vanilla, and butter pecan. Let me know how it turns out for you.

[CnD] Using a crockpot for the first time

Hello, thank you for this list. I moved here four months ago from Indiana to 
St. Louis. I have been living on my own for over 20 years. I just purchased my 
very first crockpot. If anyone out here has any tips, tricks, ideas on what to 
do with theirs, love to hear them.
Also, I would be more than willing to help anyone that is new to being blind, I 
don't there'll for the very first time, or new to cooking. I have owned all 
different types of cooking appliances, including bread machines, ice cream 
makers and the like. Looking forward to hearing from are you all of you very

Hi, So sorry to post about this here but I didn't know where else to let

people know about this amazing new product.  I would seriously describe
it
as life changing but as I don't know anyone else with eyesight problems 
I

thought I'd let you all know and you can spread the word round the
community.

The product is called Teefal Opti-grill and its one of those george
forman
style grills except it has some brains.

It has a sensor which can tell how thick your food is and another which
senses temperature, there are 6 buttons for different foods, Bugers,
Chicken, Sandwiches, Pork (sausages/bacon), Red meat (Steak
etc) and Fish.  It also has a manual button and a frozen button.

All you do is switch it on, press the frozen button if your food is
frozen,
not if not, press the button which relates to the food stuff you are
cooking
then press OK.  It pre heats then beeps to tell you to put your food on,
then it measures the thickness of the food and starts cooking it.  When
the
food is rear it beeps, then when it is medium, another beep then well

done

and it beeps again.

There is a window which displays a colour code telling you how done your
food is which all the iPhone colour identifiers will correctly notify 
you

which colour is showing, i.e. Blue for pre heat, yellow for rear, Orange
for
medium and red, well done but as I said the beeps are there if you
couldn't
use a phone to identify the colours.

If anyone does buy this product which I can't recommend enough the
buttons
run from left to right.
On/Off

Bacon/sausage

Manual/no automation/sensors
OK

So if you wanted to do a frozen sausage, you hit On then frozen then
sausage
then OK, then wait for the first beep to tell you pre heating is done,

wait 1 beep for rear, 2 for medium and 3 for well done.

As a bonus, its an amazing grill and on the 4 occasions I have used it 
in

the last week the food has been perfect.  Literally perfect.  Even has
grill
lines which look like it is restaurant cooked.

It isn't cheap at £139 or I think $199 but honestly it is worth double
the
price for what it does.

A couple of other bits about it, each button you press lights up red
which
again the colour identifiers will show you so you know if you have hit
the
frozen button for example.  It has a drip tray which catches all the
nasty
fat and stuff which slides in the front and the grill plates release
really
easily with a button on the left hand side, one for the top and one for
the
bottom then you can just wash them or throw them in the dishwasher.
Really
important is never to use metal utensils on it, use only plastic or
silicon
as if you scratch the plates you would need to replace them.

Again sorry this is so off topic but I thought it was so exciting for
blind/VI people like myself.  As I don't know anyone in that community I
thought I'd let you all know.
