Re: [CnD] Question About Types Of Mustard

2020-08-10 Thread Charis Austin via Cookinginthedark
Lisa:

This is the information I found when I did a Google search. This would probably
depend on how spicy you want what you are making.

The terms dry mustard, ground mustard, mustard flour, ground mustard seed and
dry mustard powder all refer to the same thing. They refer to the ground seeds
of any one of several species of mustard plant.

Mustard powder has a hot flavor of varying strengths and is a versatile spice
used in many meat, fish, chicken and vegetable dishes. The various types of
mustard come from the different kinds of mustard plant.

White or yellow mustard seeds are relatively large and the mildest in flavor.
These are used in typical ballpark, yellow mustards.
Brown or Asian mustard seeds are smaller and sharper in flavor; they are used
in pickling and in producing European and Chinese mustards.
Black mustard seeds are small and the most pungent of the three; they are not
often seen since they are hard to grow and have been largely replaced in the
market with the brown variety.
Mustard seeds may also be blended together. English mustards, for example,
typically use a combination of white and brown mustard seeds. The leaves of the
mustard plant are called mustard greens and are used in some recipes.

Mustard seeds may be stored for up to a year in a cool, dry place. Ground
mustard or powdered mustard can be stored for up to six months.

Hi, all.

I'm making a dill vinaigrette that calls for dry mustard.

I've heard of ground mustard, and I have Dijon mustard. The one dry
mustard I've found at my local grocery store is in a 4 oz. jar. I
thought ground mustard was the same thing as dry, but apparently not.

Is there a huge difference? could I just use ground mustard instead?
It's cheaper by several dollars.

TIA for the help.

I don't think you can get the Bluetooth one anymore, but that's the one I
have. I have heard that the WIFI one is tricky to set up but that it works
after that first not very accessible experience. If I needed to buy one

Hello:

The app is called Instant Pot. I have downloaded the app and it has a lot of
recipes. In addition, once you create an account you have access to the

I believe that the Bluetooth model was discontinued because they were making

As far as why it was discontinued, I have no clue.
Regarding the Bluetooth app, Every feature available is also VoiceOver
accessible.
Truthfully though, while there are a lot of modes you can choose from (beans,
rice, yogurt, soup, etc), more often than not, everyone uses for the most part
the manual option.
With the Bluetooth app, I am able to adjust pressure cooking time, high or low
pressure, select to start right away or delay start or even select a time for
it to start the cooking process. Say for example I want to make a batch of soft
boiled eggs and I get up early in the morning. I just put the eggs and water in
the IP and go into the app, select the manual function and configure it to
start cooking at 8:00 AM or whatever and walk away to do other stuff and not
worry about coming back to turn it on.
I think the only built in mode/function I actually use is yogurt since we make
our very own Quark (European style yogurt).
With the Bluetooth app, you can also check cooking time, temperature, how long
it's been on the warm function too. I know for example it takes more or less 60
minutes to make peruano beans depending on how hard or soft I want them to be.
So I'll just tell Siri to set a 75 minute timer. 60 minutes for under pressure
and say 15 minutes for it to get to pressure, but that will fluctuate depending
on what you're cooking and how much water you've got in the IP or if you want
to use a shortcut of already pouring in boiling water and so on.
Anyway, with the app, I can peak in and see how much time is left or if a
recipe calls for a slow release, the app again, will also say how long it's
been on warm if you don't want to use a timer.
My sighted wife over the holidays was using the 8 quart IP we also have that
doesn't have any WIFI or Bluetooth and out of habit from upstairs, she launched
the iOS app from her iPad to check the status and was reminded that it wasn't
the Bluetooth one she was using. She grumbled all the way downstairs to check.
So again, it's great having a chart to know what the physical buttons do, but
nobodies really talked about what you can actually do or access from within the
iOS app.

useful information from the IOS app that was not, otherwise, available. So how
much less access is there in the wifi model, than in the Bluetooth? Thanks. Lou

Hi,

You can get commercial pie cutting guides which will cut pies into 6, 7, or 8
slices. Basically what you do is place them over the pie and press down. They
should say what size pie they work with. The ones I've seen work with 9 inch
pie crusts. They are often sold by commercial restaurant suppliers. Do a
search for pie cutting guide.

 Cook time: 30 Min

 Prep time: 10 Min

 Serves: 14 - (1 cup servings)

 8 c popcorn, popped

Line a large jelly pan (or baking sheet) with foil and then spray with Pam.

Combine popcorn, cashews, m and cranberries in a large bowl.

Over medium heat in a large saucepan add the sugar, butter, corn
 syrup and salt. Stir frequently.

Cook 3-4 minutes until sugar is dissolved and syrup is boiling stir
occasionally. Reduce heat to medium, boil without stirring for 5-7
minutes or until mixture looks a light caramel color.

Boil an additional 2-3 minutes or until it is a rich golden brown.
Watch carefully as it will brown quickly.

Remove from heat and pour over popcorn, nuts and candy mixture.
Stir quickly to mix well. Pour/spread as much as possible pulling

Hi,

Particularly with things such as dry beans and pasta you can't fill the pot so
you actually aren't getting six quarts of food out of it.

2017-07-09 Thread Charis Austin via Cookinginthedark
Penny,

I have done chickens, turkey breasts, white rice, and many casseroles.

There is a Facebook group called Enable Kitchen which was started for members
who are blind. It is a low traffic group at this point.

Another place to learn about these cookers is to search the Cooking with the
Hazelnuts podcasts on ACB Radio. They do three or four podcasts, one of which
describes the machine. They specifically talk about the model which is
controlled with the iPhone app. They gave a good eescription of the buttons
too.

Only the 6 quart model is available to work with the app. A number of people
have asked for an 8 quart model.

I got an Instant Pot for Christmas. I had never cooked with a pressure cooker
before and have to admit that I was nervous about it. I love the Instant Pot!
What I like best is the blue tooth connectivity. I can control the pot, and
even better, know exactly what it's doing from anywhere in my house. I
particularly like the Instant Pot for making hard-cooked eggs (4 minutes under
pressure, 4 minutes to release pressure, 4 minutes in an ice-water bath, and
they peel perfectly and are perfectly well done! Also, I love the Instant Pot
for dry beans. I like to make a turkey breast in the IP -- 30 minutes from
coming-up-to-pressure until done, and much more flavorful than even oven
roasted! I'm still trying to perfect steel cut oats and rice, but I will get
there, I'm sure!

Amazon.com is having their annual Prime (Summer) Days sale beginning on the
10th of July. I would encourage anyone to invest in the Instant Pot! If you're
blind and use an IPhone or IPad, make sure you get the one that's got the blue
tooth connectivity built in!

There are a number of Instant Pot Facebook groups. I have learned a lot from
joining several of these groups.

I wish that BARD or BookShare would make one of the many Instant Pot recipes
books available, but I haven't found any yet. There are a number of
pressure-cooking cookbooks available on BookShare though, and I have learned a
lot from these as well.

Happy cooking!
Penny

Hello,

It is a pressure cooker that has many functions, including but not limited to:
yogurt maker, slow cooker, rice cooker, poultry, beans/chilli. The manufacturer
says that you can get rid of your other appliances. I have not.

I belong to an Instant Pot Facebook group and there are a number of people in

The buttons are raised so you don't have to use the app, but there are 118 of

Hello drew,

I own an Instant Pot which I have had for about ten months. I got the Smart
Cooker which can be controlled with an Android or iPhone app. I like it because
if there is a problem you will most likely get a message telling you what the
problem is.

I have made roasts, spaghetti, hard boiled eggs, meat loaf, cakes, and probably
many other things that I can't think of right now.

I purchased mine from Amazon. Right now it is selling for $155.99 I think.

I failed to mention that I mainly use my iGrill when I’m smoking meat in my
Masterbuilt electric smoker. In fact, I just smoked a turkey breast over the
weekend and used the iGrill to monitor the cooking temperature to know when
the meat reached 165 degrees. The iGrill can be used on an actual grill as
well. The range of the bluetooth works quite well for my situation as my
smoker is 60 to 80 feet from my house. I can go anywhere in my yard and still
not lose connection. I can go inside my house and still get reception as long
as I stay near the back of the house. Going to the front door causes the
connection to drop. I really love having this little gadget.

Just wanted to report on the latest things I bought from Blind Mice Mart. I
never had a good vegetable peeler so I never bothered to peel things, but
tonight I tried my ceramic Y style vegetable peeler that I got last week
from Blind Mice Mart. I had a carrot with some of that hairy stuff on the
outside so I thought I would see how the peeler worked and it was great.
The peels were very thin so I didn't waste much. Then I tried an old apple
and that worked well too. I had some store bought cole slaw which was okay
but it was missing something. so I added the carrot and apples which made it
delicious. I forgot to mention that I tried my new pear apple corer and
that worked wonderfully too. Thank you Dale. I also got the knife glider
but I was not able to figure that out tonight. I'll report when I do.

Re: [CnD] potroast in the electric pressure cooker

2016-05-03 Thread Charis Austin via Cookinginthedark
Pressure Cooker Pot Roast
Source: www.pressurecookingtoday.com

If you want to add vegetables, add them at the end. Feel free to email me off
list if you have questions.

Cook meat 20 min. per pound.

• 3 1/2 lb. Beef Chuck or Rump Roast
• 1 tablespoon vegetable oil
• 1 large onion, roughly chopped
• 1 1/2 cup water or beef broth (I used water with a Swanson Beef Flavor
Boost packet.)
• 2 bay leaves

Directions

1. Pat roast dry and season liberally with Lemon Pepper (or your favorite
seasoning).
2. Put oil in the cooking pot and select browning (or Saute on the Instant
Pot). When oil begins to sizzle, brown meat on both sides. Remove roast from
the cooking pot and add onions, water and bay leaves. Put roast back in the
cooking pot on top of the onions.
3. Select High Pressure. Set timer for 70 minutes. (Should reach high
pressure in about 10 minutes.) When beep sounds turn off pressure cooker and
use a natural pressure release to release pressure (approximately 20 minutes).
You can also use a Natural Pressure for 10 minutes, followed by Quick Pressure
Release. When valve drops carefully remove the lid.
4. Remove roast to a serving platter. Strain juices and discard onion and
bay leaves. Thicken juices in cooking pot on simmer with a slurry of water and
flour or cornstarch to make gravy.

I'm all over google looking for a recipie for my 2 lbs potroast.

Some of these recipies, based on the description, folks are using the older
electric pressure cookers and I'm to stupid to modify or figure out how to make
it work.

Folks always say they love these things because it's just put all of the stuff
in, push a button and it's done 45 minutes later.

Any suggestions on how I should prep mine for dinner tonight?

I've been putting the roast in a broth and cooking it that way with begetables
and stuff but I'm not satisfied. I understand trial and error but now I'm
consulting you professionals.

Thoughts and suggestions are appreciated.

Re: [CnD] Rice freeze it or not?

2016-04-21 Thread Charis Austin via Cookinginthedark
Hello,

Yes you can freeze rice. Cook extra, let it cool so that it will be less likely
to stick together. Freeze in freezer containers or plastic bags. When reheating
add 2 tbsp of liquid for each cup of rice that you are using. It can be kept up
to six months.

Re: [CnD] Deep fryers

2016-04-10 Thread Charis Austin via Cookinginthedark
Hello,

We have done frozen French Fries, onion rings, egg rolls and pizza rolls. All
have turned out crispy like you would want them. In addition, I have done baked
potatoes, which were not frozen, and they came out crisp like they were done in
the oven. We just put a little oil on the potatoes, poked holes in them, and
let them cook for 40 minutes.

It takes some experimentation in terms of timing. If you are cooking frozen
food, go by the directions on the package.

When we were looking, we were more concerned about controls that we could
operate so we did not do a lot of comparison shopping. We time things with our
iPhones or timer and don't specifically use the one on the machine. We keep the
temperature on high (380) degrees) so there is nothing to adjust.

There is no putting food into hot oil and no having to figure out what to do
with the oil when you are done. It is a matter of choice which one you get.

I notice that you mentioned the health benefit, but, for me at least, the
flavor and texture are the most important things. How are these factors
when comparing a deep fryer and an air fryer? I do know that my electric
popcorn popper makes far superior popcorn compared to the extremely dry hot
air poppers, and I wonder if the same is true for a hot air fryer compared
to a deep fryer. Also, what would be the price difference between fryers of
the same approximate size? Also, what about temperature control and cooking
times between units? Thanks.

Barley is a grain and there two dersions of it, one cooks in a short amount of

cooks longer.

It does not have a strong taste! It has lots of food value.

I bake the sausage in the oven for about an hour to get the fat out of it
before I put it into the sour kraut to cook.
Then I put a chopped onion in the sour kraut.
My Grand Mother told me to put a tablespoon or 2 of whole uncooked barley in to
thicken the juice before you start to cook the sour kraut.
Not more than a tablespoon or 2.
The apple gives a nice touch also, it does sweeten the sour kraut a little.

Re: [CnD] air fryers

Hi,

Yes you can do frozen French fries. Yum!

You use the basket for things that it does not matter if the oil drips through.

You can make things such as biscuits, macaroni and cheese, desserts, etc. I
would use a pan for them.

As far as using accessories, if you have an oven-proof dish that would fit in
the basket, you should be able to use it instead of a pan.

pan for. I couldn't find any information on where to get the other pans. My air

you are frying with a breading. I also wish that they had put more information

The one I purchased from Amazon is the

"Philips HD9220/26 AirFryer..."

It only has a temperature dial and the timer dial. The other ones I looked at
had touch screens.

The timer on the one I am using I set to 30 minutes, the maximum amount of
time. I use another timer to time the heating time and cook time of the food
that I am using.

Shannon, how does the timer work? I know you said it is raised, but
is there a way to set it without vision? Forgive my ignorant
question. I've never seen one of these fryers, and have been
considering getting one, but didn't know about the timers on them.

Before actually using the machine, I read the manual which I got on line. I've
made my cooking times based on information I saw in the manual. The unit heats
up to 390 degrees. The time chart actually said to cook the French fries for
ten minutes.

Through experience you will know if the food is done.

Hello,

Sorry about my slow reply, however, it's been a busy week. We have a Phillips
Air Fryer which we are enjoying. We have liked everything we have made in it.
Things we have cooked include frozen French fries and onion rings, frozen
salmon bergers, and sliced mushrooms with a little olive oil drizeled over them
and tossed to make sure they were covered. No oil was added to the other things
cooked.

There are a number of models, some of which have touch screens. The one we have
is easy to use; simply set the timer; let it heat up, and put your food in the
basket, and cook. Shake it aobut half-way through cooking.

Enjoy!

2016-01-04 Thread Charis Austin via Cookinginthedark
Hello Everyone,

ACB Radio has a show entitled "Cooking with the Hazelnuts". I encourage
everyone who is interested in purchasing an electric pressure cooker to listen
to episodes 14 and 15. There is a lot of talk regarding accessibility of
pressure cookers which I think will be very helpful.

Acbraido.org

You need to be careful regarding which model you purchase because many of them
are programmable and many of them have touch panels.
