[CnD] Another Instant-pot question

Hi,

I've been thinking of getting one.  Which models are accessible with the 
Alexa app?  The other thing I'm curious  about, is it easy to change 
from one function to another.  For example, if you wanted to Sautee 
veggies before using the slow cooker program, can this be done?  One of 
these days I'm going to stop talking myself out of getting one.  .  Lol!

I live in Canada, therefore, I don't have access to Bard.  It appears

I've tried several banana bread recipes but I always come back to this
one.  My favourite by far.  I cut the cinnamon in half and omit the nuts
because of allergies.


Banana Bread

1/2 c. butter
2 eggs
1 c. white sugar
1 tsp. vanilla extract
1 c. ripe mashed bananas
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
1/2 c. sour cream
1-1/2 c. sifted flour
1/2 c. chopped walnuts (optional)

Preheat oven to 350°F.
Mix: butter, eggs, sugar, vanilla in a bowl and mix until creamy.
Add: bananas, cinnamon and mix well.
Add: baking soda, salt, sour cream, flour, mix until all smooth.
Pour into a greased and floured 8-4 inches loaf pan.
Bake at 350°F for 1 hour until done.

Stuffing and Burger Casserole

Brown 1 to 1 1/2  lb. lean beef
some minced onion(either dry or fresh)
some garlic, sage, rosemary, or any other seasonings you like,

Place in9x13 inch baking dish.

Pour 2 cans drained mixed veggies or any other veg you wish over the meat

Pour 1 box Stove top or store brand stuffing mix evenly over the veg

Mix 1 can mushroom soup and 1/2 can milk and pour evenly over the
stuffing.

Heat in 350°F oven for 30 minutes.

Cover casserole with slices of Swiss cheese and place back into the
oven until the cheese is melted, (about 5 minutes.)

Cut with a wet knife after 5-10 minutes and serve.

Got a ton of ham left over from Christmas.  Looking for a one dish meal
to use some of it up.

I've seen ham and scallopped potatoes recipes posted before. However, I
seem to recall that they were for the slow cooker.  I'd prefer to make
it in the oven.

Cherry Christmas Slices

2 cups butter
2 cups confectioners' sugar
1 egg
1 teaspoon vanilla extract
4 1/2 cups flour
4 cups candied cherries
2 cups chopped nuts


Cream butter and confectioners' sugar.  Add egg and vanilla extract. 
Add flour.  Stir in cherries and nuts.  Divide dough into fourths.  Form
into logs.  Wrap
in plastic wrap and refrigerate overnight.
Slice into 1/4-inch slices.
Bake at 325 degrees F for 10 - 12 minutes.
Makes 6 to 8 dozen.

DALE'S COOKED HAM RECIPE



Look for an internal temp of about 150 to 165.  Your ham is cured so

there is no problem with under cooking it.

A nice little recipe I toss at the family every now and then is to

put the ham, assuming it is a boneless one, into a crock pot.

Fill the crock with coke, coca cola, about 2/3 of the way up the ham.

Put on low, the crock, and let go for about 5 hours to 8 hours.

The coke removes some of the saltiness of the ham and really tenderizes it
too.

Wonder what that stuff does to your stomach.

If in the oven, remember to glaze your ham with some brown sugar

mixed with some pineapple juice and wine!

Cloves if you like but remember to remove them before eating...that

will give you bitter beer face for sure.  Enjoy.From Dale.

I make this once in a while.

No-Peek dinner
2 pounds lean stewing beef
1 envelope dry onion soup mix
1 can (4 ounce) mushrooms drained
1 can (10 3/4 ounce)cream of mushroom soup
1 soup can of ginger ale
ssalt and pepper to taste
egg noodles cooked

Preheat oven to 300 degrees.  Combine beef, soup mix, mushrooms, soup,
ginger ale salt and pepper.  Turn into an 8 by 12 inch casserole dish.
Cover tightly and bake for 3 hours.  do not peek while cooking.

I usually omit the mushrooms as one of my kids isn't fond of them.  Although
the recipe doesn't say to do this, I cube my beef.  Depending on how many
people I'm feeding, I some times use only one pound of meat.  I don't cut
any of the other ingredients by half

If you've got a couple of cans of tuna and a couple of cans of cream of
mushroom soup you can make a simple tuna noodle casserole. This one is
easy and it's also a good base, and you can dress it up a bit with green
peas, shredded cheddar or grated parmesan cheese, and spice blends like
Greek seasoning or creole seasoning. It's a good base to experiment with.
It's simple -- cook the package of noodles, drain the tuna and put it in
with the drained noodles, then mix in the cans of soup. If you add cheese
it's good to zap it in the microwave for a minute or so to melt the
cheese, but no other cooking is needed. If you use the green peas  then
you'll want to cook them if they're fresh or frozen -- just drop them in
with the noodles in the boiling water.

If the weather isn't ugly later today, as it is still decent as I write
this right now, but I would also like to make egg noodles to go with it.
Besides boiling the noodles, any suggestions on what else I could do with
it?
I don't have much to work with as it's toward the end of the month but
maybe I could go and purchase something. Should I boil it, then top it
with cheese, mix it in a creamy soup, sspaghetti sauce, which I don't
really like honestly. Any thoughts to think outside the norm is
appreciated.

does not have the peanut butter in the dough, like the Blossom cookies, but

of a shortbread type cookie dough. You can "dress them up" by drizzling

or a chocolate star - lots of variations possible with this basic shortbread

cookie dough
Ingredients
* 1/2 pound butter, softened
* 1/2 cup plus 2 tablespoons brown sugar
* 1 and 1/2 teaspoons vanilla extract
* 2 1/4 cups flour
* about 36 chocolate kisses, wrappers removed
* white or crystallized sugar for dipping dough balls into

1. With wooden spoon, cream butter until fluffy.
2. Stir in sugar and extract, beating by hand to incorporate it into butter.
3. Stir in flour, mixing until well blended.
4. Batter will be very stiff.
5. Taking about 1 tablespoon of dough in your hand, squeeze it into a
compact mass,
and roll into a ball with the palms of your hands (balls should be about 1½"
in diameter).
6. Roll balls in sugar. then place them on ungreased cookie sheet and place
a kiss
or star in the middle of each, pressing it into the ball very lightly.
7. Bake at 350 degrees for 18 to 22 minutes, until cookie is just barely
browned
on the bottom and around edges.
8. Cool cookies on wire rack before storing in an airtight container.
9. NOTE: Good suggestion from Lasaf - use some of the delicious flavored
kisses available
these days...raspberry, caramel, mint...so many flavors, you could change
the flavor
of these little buttery cookies with each batch! Enjoy!

[CnD] Scalloped Potatoes

Scalloped potatoes

1/4 cup chopped onion
1/4 cup butter
1/4 cup all-purpose flour
2-1/2 cups milk
5 large potatoes peeled and thinly sliced (5 cups)

To make sauce, cook onion and butter until tender but not brown.  Stir in 
flour, 1-1/4 teaspoon salt and 1/8 teaspoon pepper.  Add milk.  Cook and stir 
until thickened and bubbly.  Cook and stir 1 to 2 minutes more from heat.  
Place half of the sliced potatoes in a greased 2 quart casserole.  Cover with 
half of the sauce.  Repeat layers.  Bake, covered, in a 350 degree oven for 45 
minutes, stirring once. Uncover, bake about 30 minutes more or until potatoes 
are done.  
Makes 4 to 6 servings.
