You really do not need the frosting layer. They are incredibly sweet but quite 
tangy, but omitting that layer might just cut down on the sweetness just a bit; 
it's not really needed.

Probably regular; I think that's what I used each time I made them. Once they 
came out great! Another time they were not well baked which meant everything 
collapsed on to the layer beneath it. But my oven was messed up at the 
apartment I made those at. But all other times they came out great. They are 
very very rich!

Check out some of the programs under Issues Facing persons who are blind at 
accessibleworld.org.
See if Hadley School for the Blind has a correspondence course about that.
I don't know any lists about that. Sometimes such skills need to be shown not 
just verbally explained.
American Foundation for the Blind may have some videos on their site for 
seniors.
I'd be willing to correspond privately through email about some of the skills, 
though I'm not proficient in every one of them.

I previously had the larger unit, but I now have the smaller electric
pressure cooker because it better suits our needs. 
If you get it, I would recommend downloading the manual for easy reading
access. I also scanned the cookbook that came with my unit. I had a friend
who uses them all the time show me how to use it with a few recipes. It
actually cooks faster than I ever thought possible. I have used it as a
pressure cooker, a slow cooker, and to keep food warm. I have tried to brown
meat in it, but I find that is easier to do on the stovetop and then
transfer the meat to the pressure cooker. I think I have found this
difficult because of the depth of the cooker. 
As usual my complaint is that they readout is not audible. Really, is it
that hard to make appliances talk?

F you would just cook good home cooked food. Not the processed stuff with
the trans fats, you will be fine. It's not the cholesterol per se that is
the problem, but all the unhealthy fat that goes with it. Any paleo book
perhaps on Bookshare should give you some good ideas.

[CnD] Paleo recipe bananas eggs almond flour supposed to be pancakes help

Hi, I just tried the following recipe:
Paleo Pancakes
3 bananas
2 eggs 
3-4 tablespoons almond butter
A little vanilla or cinnamon, I used vanilla
This is from Diana's site:

The course was very difficult for a blind person to take, and I wouldn't
suggest anyone trying it, but I did get all the way through.
She says to cook on one side until bubbly and then flip.
The problem is that the batter never got solid enough for a blind person to
turn easily.
But it tastes great. I'm now putting the leftover batter in a muffin tin to
see what happens.
Any ideas for making the pancakes? Could I just cook it more like scrambled
eggs? The taste is really good and I'm trying not to eat grains of any kind
right now.

I would, but never cook beans and rice in a crockpot.
But do cook the beans and the rice separate.
for the beans
1/2 cup oil, I like olive oil, but canola will do.
2 carrots chopped
2 celery chopped
1 medium onion Chopped
2 cups of red beans Soaked over night.
6 to 8 cups of liquid of your choice
1 or 2 cloves of garlic minced

I use a liner for the crock for easy clean up.
Pour in the oil
Add the onions, carrots, celery
and the beans
The liquid and garlic
Salt and pepper to taste.
If wanting to use a ham bone, cut the oil to 1/4 cup.
Cook all day on low.
The rice. I just use brown
But white is fine
For the brown rice.
Rinse one cup well under cool water.
Add 2 3/4 cup of liquid of your choice
Salt to taste, I use 1/2 tsp, but most use 1 tsp Bring  liquid to a boil.
Add rice. Give it a stir. Bring back to boil and cover with tight lid and
turn down to the lowest simmer possible. Don't lift lid for 45 minutes. Rice
is done. Fluff with a fork.
White rice
2 cups of liquid, bring to a boil and add salt one cup of rice, stir  and
cover with tight lid and turn heat down to the lowest simmer. Don't lift lid
for 20 minutes. Rice is done.
Now  put bean soup over rice and enjoy.

 Would anyone please send super easy recipes for red beans and rice in 
 the crockpot?
 I also have a question about festivals in the crockpot. But I'm 
 cooking stuff like celery or potatoes can I put them in at the 
 beginning or do I need to put them in more towards the end. I meant
vegetables.

350 F  and the average is 35 minutes. A inside temperature is  165 to 175

What about protein shakes, particularly the Thorne ones with pea and rice
protein. They are delicious, full of protein and all kinds of good things,
and they taste great in smoothies, in water by themselves, and as a base for
pudding, just add much less water.

Thanks for the ideas so far, everyone. I can't have bread either, so that
eliminates two of my favorite sandwiches: peanut butter and jelly, and
peanut butter and banana. I know white bread is soft, but they told me not
to eat it anyway. Yes, ice cream, applesauce, pudding, and similar items are
fast becoming staples. smile Protein is, as one person said, the main
factor - I add cheese to mashed potatoes to fill them out more, and of
course macaroni and cheese has plenty already, but I'm trying to think of
other ways to make meals more filling and varied.

So you're on a soft diet with low acid content.
Alfredo sauce is of course going to avoid the acid from tomatoes. But it
seems your biggest challenge is getting a decent amount of protein, as many
meats will be out of the question. Mashed beans won't break the soft rule,
so you'll want to cook them for a while and then either mash them against
the side of the pot with a spoon or if you want them even finer run them
through a blender.
You're going to want a bit more spicing to keep from going out of your gourd
with culinary boredom, so you might want to pick up a couple of envelopes of
ranch dressing mix and sprinkle some of the seasoning into what you're
making to give it a bit more flavor.
Fish is pretty soft in body, especially whitefish like Pollock, tilapia, and
even canned tuna. You can also find soups with no tomato base, like various
chicken soups, split pea, bean with bacon, and New England clam chowder,
though you'll probably want to run the latter through a blender to turn the
clams into fragments. Cabbage soup, which involves cooking cabbage until
it's way past limp, might also give you some flavor variety, but you can
speed up the process by mincing the cabbage very fine.
Those are some ideas. Hope it goes well.

Any kind will work. Brown, white, short or long grain. The cooker will ding
when done so you don't need to watch times, that is if you have a model
where you push the lever down.
