Hi Dad,

I did not receive your email. We’ll just have to keep trying. I thought I’d
try a new recipe-Tuscan bean stew. I need to buy the stuff for it next
week. I sent Olivia Belle’s gifts to her last night. We got her a
raincoat, bootsw and a talking puzzle map. It was supposed to be for
Christmas but I needed to save some money. We didn’t go overboard with her
gifts because she’ll out grow everything and that would be a waste of money.
I will talk to you tonight. I hope you get this email.

Love,

Hi Will, You can certainly purchase a bread machine, but you don't
need one! I'm going to share an easy recipe for crusty French-style
bread. The dough makes enough for at least 3 loaves, and you don't
have to use it all at once. You can store it, covered in the
refrigerator, for up to 2 weeks, and take it out to bake another loaf
as needed. I love this bread and made it quite a lot at the beginning
of 2016, then I got out of the habbit. I think you are inspiring me to
begin making bread again! Hardly anything in the world is more
delicious than homemade bread with sweet Irish butter!

Simple Crusty Bread, from "Artisan Bread for 5 Minutes a Da
"

Here's the recipe for Simple Crusty Bread that ran in The New York
Times: "In a large bowl or
plastic container, mix 1 1/2 tablespoons yeast and 1 1/2 tablespoons
kosher salt into 3 cups
lukewarm water (about 100 degrees). Stir in 6 1/2 cups flour, mixing
until there are no dry
patches. Dough will be quite loose. Cover, but not with an airtight
lid. Let dough rise at room
temperature 2 hours (or up to 5 hours).

"Bake at this point or refrigerate, covered, for as long as two weeks.
When ready to bake,
sprinkle a little flour on dough and cut off a grapefruit-size piece
with serrated knife. Turn
dough in hands to lightly stretch surface, creating a rounded top and
a lumpy bottom. Put dough on
pizza peel sprinkled with cornmeal; let rest 40 minutes. Repeat with
remaining dough or
refrigerate it.

"Place broiler pan on bottom of oven. Place baking stone on middle
rack and turn oven to 450
degrees; heat stone at that temperature for 20 minutes. Dust dough
with flour, slash top with
serrated or very sharp knife three times. Slide onto stone. Pour 1 cup
hot water into broiler pan
and shut oven quickly to trap steam. Bake until well-browned, about 30
minutes. Cool completely.
Yields 4 loaves."

I usually get only 3 loaves from this amount of dough -- I guess my
family likes a larger loaf. Like any French bread, this loaf does not
keep very well -- but we have no trouble eating most of a loaf at one
meal and making French toast out of any that's left over.

Enjoy!
Penny

I love bread and have always wondered how to bake bread. Even if it's
just bread I can just use for eating with dinner or sandwiches and
then getting better.
I want to know what materials I need to begin. I know I need some
kind of bread machine but don't have one. What do you recommend?
And, does anyone have recipes to get me started? I hope it will be easy.

Hello everyone I hope that you all had an awesome Thanksgiving.
The first part is for Charles it's a question about a Fishplace in
Phoenix, and the pieces were huge do you remember the name of that place?
For the life of me I cannot figure it out, friends and I were talking
about good fish places. And I remember when you and I used to hang out
when I had Amber my last guide dog, and you still had Carolina. We went to
this place to get fish, you wanted me to try it. Do you remember the name?
And my other question so I want to take over, does anyone have a recipe
for stuffed peppers I've been wanting to try these never knew how to make
it, does it have ground beef and rice? Thank you in advance

[CnD] dinner in a pumkin

2016-10-31 Thread Steve Stewart via Cookinginthedark
1 pumpkin medium size
1 onion small
1 pound ground beef
2 tablespoons soy sauce
1/4 cup brown sugar
1/2 cup mushrooms
1 10 3/4-ounce can cream of chicken soup
1/2 cup sour cream
1 1/2 cups white rice

Cut a hole in the top of the pumpkin and clean it out. Make sure you get all
the guts and seeds out but leave the pumpkin entact.

Put rice and water in a microwave safe dish and cook on high until rice is
tender (about 15 minutes.

Brown ground beef in a large frying pan and add onions to saute. When ground
beef is no longer pink add the rest of the ingredients and stir until completely
mixed.

Mix ground beef mixture and rice together and pour into pumpkin.

Put the top back on the pumpkin and bake at 350 for 1 hour.

Be sure to scoop out part of pumpkin when serving.

Yes, thank you; a couple people have mentioned that Bard site. Maybe that
site specializes in cookbooks? I'll have to see. I am assuming it's an org.
Then again it's called Bard, so in addition to cookbooks, maybe there are
novels and such.

Subject: [CnD] Bacon Hot Dogs:

Did someone say there were no recipes for Bacon Hot Dogs? Be ware; that is
only so far as that person knows. Years ago back in the 70's in cooking
class we made what the teacher called bacon hot dogs.

First we took wieners and made a slit down the length of the wieners being
careful not to cut all the way through, but coming very close.

Next we took American cheese slices and broke them into slices that would
fit in those slits in the wieners.

after the cheese was in place, we took a slice of uncooked bacon for each
wiener and wrapped each with a slice of bacon.

After that we opened one of those containers of Hungry Jack Butter Milk
biscuits, the kind from the refrigerated section, separated the biscuits
and made them into strips for each wiener. We wrapped the bacon cheese
wieners with a strip encasing the wieners completely.

Then we baked them in the oven. The problem is I don't remember the exact
temperature or time.

If I try it any time soon, I'll try it at 375 for about 20 minutes to see
what happens. So recipes for bacon hot dogs certainly exist, because I
remember working with this one all those years ago. The cookbook we had
in that class was Cooking Without Looking. Too bad I don't have access to
that book to see if that recipe for that bacon hot dog came from there.

Now we have a first: a cooking mystery that I just posted on this forum.

It's a pan that the Mice sell that has wells for the batter; you cook a few

interesting; would appreciate if you could check it out for me. Thanks.

I don't think so, since he said you'll need to cook it on medium heat.

   Is it dish washer safe?

I would think it is, as long as you can fit a pan in your dishwasher.

Of course, I stand to be corrected here.

I just purchased a pancake pan from blindmicemart.
Before that, I was pancake flipping impaired.
This pan made the difference for me.
It is sort of a shell with four indented cups on the bottom and a smooth
top.
Butter both top and bottom.
Make your batter and use an ice cream scoop to put batter in the
indentations on the bottom of the pan.
Close the lid with the handle on top and cook about a minute on medium or
so.
Flip the pan over, literally, and cook another minute.
My pancakes came out of the pan without any sticking or other trouble This

worked for me and I hope works for you.
Some people use tuna cans with the bottom and top removed as a guide for
the batter.
I was only able to make scrambled batter but you might be better than I.
I hope some day you will be a master of the wonderful pancake, so simple
and so delicious.

Actually, "cooking in the dark" has a program you can listen to on your
Stream. I was unable to get a podcast searching with my stream (second
generation.) If you listen to the show, Dale mentions a way you can get
this using a computer.

You have to put "main mccu" in your "favorites" box. You can find main
menu

through the internet radio on the Stream.

I would think it is, as long as you can fit a pan in your dishwasher.

Flip the pan over, literally, and cook another minute.
My pancakes came out of the pan without any sticking or other trouble This

Some people use tuna cans with the bottom and top removed as a guide for
the batter.
I was only able to make scrambled batter but you might be better than I.
I hope some day you will be a master of the wonderful pancake, so simple

2016-08-01 Thread Steve Stewart via Cookinginthedark

List guide lines. Note, that the moderators addresses are in cluded at the end
of this message.

1. Keep messages on the topic of cooking.

2. Change subject lines to reflect the body of the message.

3. Avoid sending short, meaningless messages. Examples follow: "Thanks for the
recipe" "This sounds good" "Me too" Messages like this clutter up the list and
greatly increase the time it takes to read through posted messages. If you want
to thank someone for a recipe please do so off list.

4. Please limit posting of multiple recipes to about 5 to 7 per day. You take
the time to post them, so make sure that they get read. Bombarding the list
with 10 to 20 recipes will ensure that many are deleted instead of read.

5. Questions, comments, complaints, and requests for assistance should be
directed to the list owner or the list moderators for proper handling.

6. Off Topic notices or solicitations must be sent to the list owner for
approval and posting to the list. Failure to do this may result in suspension

sure all the infor is in the recipe.

the water is it 1 tablespoon or teaspoon because how I hear it on my iPhone
it sounds like one ton of water! LOL and the others I will say the same I
feel silly asking this but please forgive me. Thank you in advance and as
for the cinnamon is it 1 tablespoon or teaspoon, I know cinnamon goes a long

1 T. water

1/4 t. salt

Mix together flour, gumdrops and pecans; set aside. In a medium bowl, beat
together eggs and water. Add brown sugar and beat until it is just light.
Beat
in cinnamon and salt. Stir gumdrop mixture into the brown sugar mixture.
Spread into a greased 15 1/2 x 10 1/2 pan. Bake at 375° F. until cookies

done,
about 15 to 18 minutes.

For Icing: In saucepan, melt 3 tablespoons of butter over low heat. Remove
from heat and add 1 teaspoon of great orange peel and 2 tablespoons of
orange
juice. Sift in enough powdered sugar to make a thin icing and blend until
smooth. Spread icing over warm cookies and cut into bars.

the turkey is thaw out.

I like using an oven bag, plus plenty of butter of olive oil to lubricate
the bird thoroughly. If you haven't bought your bird by now, you'll be hard
pressed to get it thawed in time.

Hi Trinh,

We always cook the whole bird instead of just a turkey breast. I rub it all
over with a bit of olive oil, put cut onions and celery in the cavity and
season with whatever I have or like! If you go to butterball.com you'll find
some ideas. My turkey is in the fridge thawing as it should be by now,
unless you buy a fresh. Good luck and happy cooking!

2015-10-01 Thread Steve Stewart via Cookinginthedark

Hello everyone I hope you all are doing well.
There wasn't light argument with people I speak to about meat is it bad or
good to put it in cold water or hot water? You would think that putting it
in the sink to thaw out in hot water would melt the ice quicker. So which is
better or the right way in cold or warm water. Thanks

2015-05-01 Thread Steve Stewart via Cookinginthedark

List guide lines. Note, that the moderators addresses are in cluded at the end
of this message.

1. Keep messages on the topic of cooking.

2. Change subject lines to reflect the body of the message.

3. Avoid sending short, meaningless messages. Examples follow: Thanks for the
recipe This sounds good Me too Messages like this clutter up the list and
greatly increase the time it takes to read through posted messages. If you want
to thank someone for a recipe please do so off list.

Failure to do this may result in suspension
from the Cooking in the Dark list.

just remember if you are going to post a link to the list, you need to say
what it is, and make sure it does have to do with cooking. if not, then you
need to ask me if you can post it. thanks.
