Re: [CnD] recommended cookbooks
where did you find the joy of cooking book? On Jan 31, 2012, at 4:40 PM, Nicole Massey wrote: The Joy of Cooking is a must. It's more than a cookbook, its' a cooking textbook, with a lot of technique in it. Betty crocker's cookbook is a similar one. Get it through Bookshare. If you can find it the 1918 Fannie Farmer cookbook is wonderful. It's the last one she put together before her death, and it has a lot of the basics in it. There was a wonderful little book my ex found called The Can Opener Cookbook. It's vintage, from when housewives were just starting to use a lot of canned goods, but it kept things simple. If you can find it, scan it and make it available for Bookshare so we can have access to it, and if I find it first (mine got stolen) I'll get it up there. I love the Foods of the World series from Time-Life. They haven't reissued them yet, but hopefully they will some day. If they don't I'm working on collecting them. There's a great book called Recipes from the backs of Boxes, Bottles, Cans, and Jars that has a lot of those things you find on a package, and I'm planning on scanning my copy and putting it up on Bookshare as soon as I find my big book of recipes. I recently found a great book on Indian (dots, not feathers) cuisine called Curry: A tale of Cooks and Conquerors, by Lizzie Collingham, which both deals with how East Indian cuisine came about and some of the recipes typical of the cuisine. I haven't made any of them yet, but it was a great listen. NLS has it, and it's downloadable on BARD if you have a digital player For those of a zymurgical bent, (wine making) there's Acton Duncan's book, Making Mead. I love this book, and I hope to get it scanned soon. It's written from a British perspective, but other than the fact that Heather honey is hard to get in the Americas it'll work. I've made a lot of good honey wines from it. The wimemaker's recipe handbook, by Raymond massaccesi is also interesting, and it's another one I hope to have available soon on Bookshare. And for something different there's Cider by Annie prouslx and lew Nichols, which is a great book on making ciders of all kinds. For something without the octane I got a lot out of Cresswell's book, Homemade Root Beer and Soda Pop. It's another one I plan to scan soon and put up on Bookshare. Sorry that a lot of these aren't blind accessible yet, but if I can get a bit of sighted assistance I can locate them and run them through the trusty HP Scanjet and they'll be around for y'all to benefit from soon. -Original Message- From: cookinginthedark-boun...@acbradio.org [mailto:cookinginthedark-boun...@acbradio.org] On Behalf Of Nancy Martin Sent: Tuesday, January 31, 2012 3:17 PM To: cookinginthedark@acbradio.org Subject: [CnD] recommended cookbooks Hi everyone, I'd like to know what cookbooks and cooking gadgets you find the most helpful. hi. there are all kinds of crock pots, big and small, fancy or plain. some with only one knob that lets you select from slow to fast cooking, some with timers and other features. some of them come with carrying cases so you can carry the contents hot to your destination. all of them are not round. some of them are oblong in shape to accommodate larger cuts of meat. Re: [CnD] frozen meat in crockpot question
Hi everyone. The beauty of having a crockpot is that one can cook a lot of stuff and have it all week. What I have found it helps me, because of the fact that my work schedule is so long and tedious a lot of times I don't get home until seven or 730, is I try to do my crockpot cooking on the weekends. One thing I have found that is helpful is that let's say in the case of spaghetti sauce or chili, I use meat substitute made out of the tofu white substance or soybeans. This way I can put them in the crockpot without having to worry about anything because they are dried so to speak, and they pick up the flavor of the meet. Another thing that I have found helpful, is that let's say I know that I'm going to be cooking the chicken recipe I can go ahead and put the get the chicken and put it in the bottom of the refrigerator the night before I am going to put everything together. Then add with when I risk my chicken as they always do, is just a quirk of mine, then it's it's thought but I do sympathize with the people that I have a schedule that is very hectic and often times it is hard to remember things. I am not one of the most organized people in the world. Another nice thing with the crockpots nowadays is it the middle comes out of the crockpot so you can put the ingredients in the crockpot the night before stick it in the fridge and then before you're ready to go out you can assemble and turn it on I believe most of the recipe state that if you do this however make sure that you would fit factor in a little extra time for the fact that you're starting with extremely cold ingredients hope this helps and I hope everybody has a wonderful day this is a great list and I have gotten a lot of good recipes and helpful tips from it everyone take care goodbye sorry. I'm sure they are available in any drugstore. Your finger still might get a little hot, but you can feel through them. I have gotten the hang of cooking in the skillet; I' even managing to get bacon to turn out decently most of the time by just letting it cook. What I really need, though, is something that I can use in conjunction with my tongs or spatula that will let me feel the food to see if it's done or not. Something like a thin pair of gloves or hot mits. Does this kind of thing even exist? So far I have had to use my fingertips, not the reading ones, but still. I can't get all the feedback just using a spatula, or I'd do that. Unless you all have other suggestions. :) Any hot mits you all would recommend for this? Re: [CnD] Nescafe Dolce Gusto
the tassimo uses small flat discs that go into the machine and they have a bar code printed on them that the machine reads. the machine is rather square in shape. there is no coffeepot; there is a place to insert the cup. behind this is a water tank. the disc fits on top of the machine; you open up a lid and insert the disc in a certain way. i like it because it is quick, easy and convenient; no mess. i get my discs from amazon, which has quite a good selection. i lead an extremely busy life between work and other activities. yes, they are a bit pricey, but i feel that i have reached a stage in my life where i can enjoy a few pricey things. i don't go clubbing or anything like that, and this is one of my small luxuries. She is sighted, and not a very descriptive person, so I can't ascertain how simple or difficult the machine would be for a blind person. I wonder how expensive it is to maintain, and where you would get refills for it? That is, can you only get refills from the machine's manufacturer? Is reordering a hassle? Might the hassles outweigh the benefits? And how much space does it take up I asked my friend that question, and she said, Not that much. Gee, thanks. That was helpful.
