 Hi,

Do any of you have the Keurig Mini coffee maker? If so, what sort of luck
have you had with it and where did you purchase it? If this isn't the model
you have, what would you recommend for a totally blind person?

 Thanks.

who makes good quinoa pasta?

I like quinoa. You can get spaghetti and curly pasta made from quinoa. It
has a stronger flavor than wheat or rice pasta, so you can't use sauces with
a subtle flavor. You can use something like olive oil to coat the pasta and
eat it that way. The usual tomato based spaghetti sauce works fine.

You can use the quinoa as a base for salads, as you would brown rice, or
 bulgur.

you can cook quinoa quie nicely in the rice cooker. if the quinoa has been
pre rinsed, it will list it on the bag. if you get yours from bob's red
mill, which i have seen at wal-mart, it is pre-rinsed.
you can use it as a substitute for rice; i.e. put chili over it, and there
are some books with recipes for using it in baked goods.

 Basic Quinoa
 Ingredients:
 1 cup quinoa
 1 1/2 cups cold water
 Optional: 1/4 tsp salt
 Quinoa Cooking Directions:
You'll need a 2 quart pot with a tight fitting lid, and a fine mesh
strainer Double the recipe if you want to have leftover quinoa for
 another meal or two Optional:
Soak the quinoa for 5 min in the cooking pot. Soaking helps quinoa to
cook evenly, and loosens up any residue of saponin (usually removed
in processing), which can give a bitter taste Most quinoa sold in the
US these days has been cleaned, and steamed to remove the saponin, so
don't worry about that overly much To Rinse: Stir the quinoa with
your hand, and carefully pour off the rinsing water, using a fine
mesh strainer at the last Drain quinoa well in the strainer, transfer
to the cooking pot, add 1 1/2 cups water 1/2 tsp salt if desired
Bring to a boil, cover with a tight fitting lid, and turn the heat
down to simmer Cook for 15 minutes Remove quinoa from heat and allow
to sit five minutes with the lid on Fluff quinoa gently with a fork
 and serve

where did you find the joy of cooking book?

On Jan 31, 2012, at 4:40 PM, Nicole Massey wrote:

The Joy of Cooking is a must. It's more than a cookbook, its' a cooking
textbook, with a lot of technique in it.

Betty crocker's cookbook is a similar one. Get it through Bookshare.

If you can find it the 1918 Fannie Farmer cookbook is wonderful. It's the
last one she put together before her death, and it has a lot of the basics
 in it.
There was a wonderful little book my ex found called The Can Opener
Cookbook. It's vintage, from when housewives were just starting to use a lot
of canned goods, but it kept things simple. If you can find it, scan it and
make it available for Bookshare so we can have access to it, and if I find
it first (mine got stolen) I'll get it up there.
I love the Foods of the World series from Time-Life. They haven't reissued
them yet, but hopefully they will some day. If they don't I'm working on
 collecting them.
There's a great book called Recipes from the backs of Boxes, Bottles, Cans,
and Jars that has a lot of those things you find on a package, and I'm
planning on scanning my copy and putting it up on Bookshare as soon as I
find my big book of recipes.
I recently found a great book on Indian (dots, not feathers) cuisine called
Curry: A tale of Cooks and Conquerors, by Lizzie Collingham, which both
deals with how East Indian cuisine came about and some of the recipes
typical of the cuisine. I haven't made any of them yet, but it was a great
listen. NLS has it, and it's downloadable on BARD if you have a digital
 player
For those of a zymurgical bent, (wine making) there's Acton Duncan's book,
Making Mead. I love this book, and I hope to get it scanned soon. It's
written from a British perspective, but other than the fact that Heather
honey is hard to get in the Americas it'll work. I've made a lot of good
honey wines from it. The wimemaker's recipe handbook, by Raymond massaccesi
is also interesting, and it's another one I hope to have available soon on
Bookshare. And for something different there's Cider by Annie prouslx and
lew Nichols, which is a great book on making ciders of all kinds.
For something without the octane I got a lot out of Cresswell's book,
Homemade Root Beer and Soda Pop. It's another one I plan to scan soon and
 put up on Bookshare.

Sorry that a lot of these aren't blind accessible yet, but if I can get a
bit of sighted assistance I can locate them and run them through the trusty
HP Scanjet and they'll be around for y'all to benefit from soon.

Re: [CnD] about crockpots

hi. there are all kinds of crock pots, big and small, fancy or plain. some with
only one knob that lets you select from slow to fast cooking, some with timers
and other features. some of them come with carrying cases so you can carry the
contents hot to your destination. all of them are not round. some of them are
oblong in shape to accommodate larger cuts of meat.

start the cooking early in the morning before I go to work and leave it
unattended for about 7 hours until I get back home? I know I can time the
cooking to 4-8 hours. I'm just not sure it is safe to leave the house while
 this thing is working.

Re: [CnD] frozen meat in crockpot question

2012-01-18 Thread information for gwen
Hi everyone. The beauty of having a crockpot is that one can cook a lot of
stuff and have it all week. What I have found it helps me, because of the fact
that my work schedule is so long and tedious a lot of times I don't get home
until seven or 730, is I try to do my crockpot cooking on the weekends. One
thing I have found that is helpful is that let's say in the case of spaghetti
sauce or chili, I use meat substitute made out of the tofu white substance or
soybeans. This way I can put them in the crockpot without having to worry about
anything because they are dried so to speak, and they pick up the flavor of the
meet. Another thing that I have found helpful, is that let's say I know that
I'm going to be cooking the chicken recipe I can go ahead and put the get the
chicken and put it in the bottom of the refrigerator the night before I am
going to put everything together. Then add with when I risk my chicken as they
always do, is just a quirk of mine, then it's it's thought
but I do sympathize with the people that I have a schedule that is very
hectic and often times it is hard to remember things. I am not one of the most
organized people in the world. Another nice thing with the crockpots nowadays
is it the middle comes out of the crockpot so you can put the ingredients in
the crockpot the night before stick it in the fridge and then before you're
ready to go out you can assemble and turn it on I believe most of the recipe
state that if you do this however make sure that you would fit factor in a
little extra time for the fact that you're starting with extremely cold
ingredients hope this helps and I hope everybody has a wonderful day this is a
great list and I have gotten a lot of good recipes and helpful tips from it
everyone take care goodbye sorry. Siri did not recognize my pauses as ends of
sentences. Passion to think it's time to think double tattooing dictation

Re: [CnD] Cracker suggestions, Please

2011-12-23 Thread information for gwen
Crunchmaster puts out some nice gluten free crackers, many flavors. they are a
bit pricey, but you can get them cheaper at sam's club or perhaps some other
warehouse.

Re: [CnD] bread machines

2011-08-07 Thread information for gwen
i used to have a bread machine and it was wonderful. when unplugged and then
plugged in again, it would reset to the default settings. mine would beep at
the various points in time, and it would beep twice if other ingredients were
needed, i.e. nuts. i cannot remember the exact operation of the machine, but it
worked well. it goes through several steps of mixing, kneading and resting. and
finally baking. i initially learned to make bread without a machine, but having
a machine is not as messy. take care.

The one that I have bought says it will make a beep sound when it starts and
another beep sound when the bread is done. It has some buttons on the top of

why it should be so hard, even though I haven't tried it, but from every
thing they are telling me about it once it is marked or I can remember which
button is which there shouldn't be a problem with that part. From what the
recipes that I read to make different kinds of breads with it, it tells
what ingredient to put in when and etc. Then close the lid turn it on and it
dose the rest. So why wouldn't a totally blind person not be able to figure
that out? It doesn't sound hard to me and I cannot see what I am doing
 either. grin. Katie

Hi, I'm thinking about making my own bread but not sure how accessible bread
machines would be for totally blind people. Honestly I've never even seen
one. :) Some of you say it can be done and some say it's impossible. Please
would you give me the pros and cons?

 thanks

Re: [CnD] brown rice.

2011-05-12 Thread information for gwen
another good choice for brown rice is basmati brown rice. it cooks the same way
as regular brown rice, but has a wonderful flavor and aroma. it smells like
popcorn when it is cooking. i also believe its glycemic index is lower than
regular brown rice. try it, and i think you will be pleasantly surprised.

What I usually do when I'm cooking the rice on the stove is to first bring

minutes to low. You want just a quite simmer. So you may end up at low
 Hope this is clear.
You don't want it to boil over.

Re: [CnD] Hot Mits

2011-01-29 Thread information for gwen
it would be extremely dangerous to use surgical gloves with cooking, in my
opinion. oven mits are the best way to go. they fit on your hand and you can
use your fingers and thumbs independently. a hot pad can be not as safe because
you are having to hold onto it and get your food at the same time. i do use
them when cooking on the stove to remove a lid, but for oven work a hot mitt is
really great.

finger in there once in a while but I know it's not safe.

What about those very thin gloves; almost the texture of skin that doctors
 wear for examinations?

I'm sure they are available in any drugstore.

Your finger still might get a little hot, but you can feel through them.

I am looking for something that I don't even know if it exists.

I have gotten the hang of cooking in the skillet; I' even managing to get
bacon to turn out decently most of the time by just letting it cook.

What I really need, though, is something that I can use in conjunction with
my tongs or spatula that will let me feel the food to see if it's done or
not. Something like a thin pair of gloves or hot mits. Does this kind of
thing even exist? So far I have had to use my fingertips, not the reading
ones, but still. I can't get all the feedback just using a spatula, or I'd
do that. Unless you all have other suggestions. :)

Any hot mits you all would recommend for this?

Re: [CnD] Nescafe Dolce Gusto

2010-12-28 Thread information for gwen
the tassimo uses small flat discs that go into the machine and they have a bar
code printed on them that the machine reads. the machine is rather square in
shape. there is no coffeepot; there is a place to insert the cup. behind this
is a water tank. the disc fits on top of the machine; you open up a lid and
insert the disc in a certain way. i like it because it is quick, easy and
convenient; no mess. i get my discs from amazon, which has quite a good
selection. i lead an extremely busy life between work and other activities.
yes, they are a bit pricey, but i feel that i have reached a stage in my life
where i can enjoy a few pricey things. i don't go clubbing or anything like
that, and this is one of my small luxuries.

expensive it is to maintain, and where you would get refills for it?
That is, can you only get refills from the machine's manufacturer? Is
reordering a hassle? Might the hassles outweigh the benefits? And
how much space does it take up I asked my friend that question, and
she said, Not that much. Gee, thanks. That was helpful.
