Internally mangos are fiberous and have much fiber around the pits.  For
that reason, a serated knife will be the most effective tool.
First only attempt to cut through the skin all the way around the mango
from end to end.  If the mango isn't over-ripe it will have good
solidity inside.  Next turn the mango and make a second cut around the
mango from end to end so by the time cutting is finished four equally
spaced cuts are on the skin of the mango.
Next get to an end and pry a corner of the skin up and roll the piece
back off the mango's flesh.
Repeat with the other sections of the peel.
Then slice into the flesh slowly and gently all around the mango.  You
don't want to cut into the pit.  Once a cut goes all the way around it
may be possible to separate one flesh side from the pit by pulling it
off.  Try the other flesh half and if all goes well, you'll have two
flesh halves, a pit and four skin sections left.  A very good choice for
a fruit!

Hi
The way I peel my mangos  is to place the mango with the smaller end or side  up
Taking a knife, I cut down as if I was cutting it into fourths.
I then start to peel down by taking the top and pulling down.
Note that there is a long and large pitt in the center of the Mango so there is 
no way you can cut right through it.

Another way I like to eat it and it is messy but so so good is to simply cut it 
in half(again just slicing it down
Then peel it that way and just eat it right off the peel.
It is very juicy but so good!

the pit.

I now have all the flesh off the pit, and the skin is attached to the flesh.

Not even going to lie. I can cook, chop, dice, peal and all that. And while I'm 
no chef and no one's going to "ask" me to make a  holiday meal for a bunch of 
folks, I at least won't starve and can even whip something up for the wife and 
I every now and then.
When it comes to mangos however... I don't even try. I bust out that blind card 
and wait for the sighted wife to cut those suckers up.

Dixie, I cut mangos like you do, but take time to eat whatever may have stuck 
to the pit, even if all I get is juice on my chin. That said, if a sighted 
person is handy, I pass the mango cutting on because they can always do it 
neater and faster than I can. If I have to do it myself, that is fine. I loved 
your description and saved it in my Kitchen tips file.

Speaking of mangos and other fruits, does anybody have a chart to share that 
tells how we know when a fruit is ripe and at its prime? Also, which ones 
continue to ripen after picking and which must be fully ripe when they are 
placed in the store?  I know that strawberries don't change their ripeness 
after being picked. If picked too early they will never be right.
Bananas get riper from the time they are picked until they spoil
Avocados are like bananas and continue to ripen after picking.
Cantaloupe is also in this class and continues to ripen. I don't really know 
about the rest but it would be handy to learn.
