Here's another single-serving mix. This version is not very sweet.


1 cup milk

1 tbsp. cocoa powder

2 tbsp. sugar (I sometimes use only 1 or substitute 1 tbsp. agave syrup).

1 tsp. vanilla


Combine dry ingredients in a large coffee cup. Make a paste with milk. I 
usually use a couple of tablespoons but don't really measure out this milk.

Add the cup of milk and the vanilla. Mix as well as you can. Heat in the 
microwave for at least a minute. It usually takes mine a little longer 
to get hot enough for the mixture to dissolve, but check it after a 
minute. Enjoy.

I am not Gail, but, this is how I would do it.
I would add the flavored coffee mates instead of the regular coffee mate at 
the time of making up all of it to store in containers. The recipe calls for 
coffee mate so just use some flavored type if you wanted too.   Katie

Use a large  air tight container for  storing the mix. Enjoy!

11 to 12 cups of instant dry milk
2  pound  box of Nestles Quick chocolate mix
1 16 oz. jar Coffee Mate
1  1 pound box of powered sugar

mix all together in large  container, blending well. Use air tight lid on 
container for storing.

To make a cup of hot chocolate  use maybe
1 or 2 tablespoons  to a cup of very hot water, or to your taste..Depends on 
size of cup too. Add marshmellows  on top if desired.

Today I bought a can of cocoa mix from a fair trade store, which specializes in 
goods from third world countries.  This particular mix, which calls for milk 
instead of water, was called spicy, and it contains a small amount of cayenne 
pepper (hope I spelled that right.)  Anyway, this really gives the cocoa a 
delicious taste and a little bite, which may not appeal to some, but I assure 
you it is delicious!  I was thinking a pinch or two of pepper could be added to 
any of these great mixes I've seen posted lately.  Just an idea some of you 
might want to try.
