Hi Folks,

I love this list because there are so many great ideas and recipes shared here.

I'm wondering if any of you have some good recipes for cooked cabbage.
I'm not looking for cold recipes like cole slaw or salads, but rather
cabbage soups, cabbage casseroles etc.

Any such recipes would be very much appreciated.

If you have too many and want to write me off list, please feel free to do so.

The Amish Cabbage Casserole Recipe

Ingredients

list of 12 items

1 medium green cabbage, cut into thin wedges

1/2 cup water

1/4 cup butter or margarine

1/4 cup all-purpose flour

2 cups milk

1/2 teaspoon salt

1/4 teaspoon pepper

3/4 cup cheddar cheese, shredded

1/2 cup mayonnaise

3 tablespoons

chili

sauce

1/2 cup finely chopped onion

1/2 cup green bell pepper, finely chopped

Instructions

1. Preheat oven to 375 degrees F.

2. Combine cabbage wedges and water in a large saucepan; cover and

cook

over medium heat 15 minutes. Drain well, and place cabbage wedges in a 12 x 
8 x 2-inch baking dish.


3. Melt butter in a heavy saucepan over low heat; add flour, stirring until 
smooth. Cook over low heat 1 minute, stirring constantly. Gradually add 
milk;


cook over medium heat, stirring constantly, until mixture is thickened and 
bubbly. Stir in the salt and pepper. Pour mixture over cabbage, and bake at


375 degrees for 20 minutes.

4. Combine cheese, mayonnaise, chili sauce, onion, and green

bell pepper

; stir well, and spread over cabbage. Bake at 400 degrees F for 20 minutes.

2 tablespoons butter

1/3 cup finely chopped onion

2 tablespoons sugar

6 cups shredded red cabbage

1/2 cup red wine vinegar

2 teaspoons salt

1 cup diced cooking apple (approx. 1 large apple)

2 tablespoons sugar

1 1/2 cups dairy sour cream, at room temperature

Apple slices (optional, for garnish)

In skillet melt butter; sauté onion with 2 tablespoons sugar 5 minutes.

Stir in cabbage, vinegar and salt; cover and simmer 10 minutes.

Add apple and 2 tablespoons sugar; cover and cook about 5 minutes.

Transfer to heated platter; spoon sour cream over center of cabbage.

Garnish with apple slices, if desired.

Makes 8-10 servings

Enjoy.

I like to use bok choy (Chinese cabbage) with other Chinese vegetables to
make a low calorie soup.  Use bok choy, baby corn, black button mushrooms,
water chestnuts (usually canned), and cubed tofu (optional).  Put vegetables
in a soup pot.  Add enough water to barely cover.  Simmer until the veggies
are crisp tender, about ten minutes.   Flavor with miso or soy sauce if
desired. Weight Watchers has a no points soup recipe similar to this.  

Of course you can cut cabbage in sections and boil, as you would on St.
Patrick's Day when you serve it with corned beef.  You could add salt, but
cabbage doesn't really need more flavor.
