CHICKEN SALAD WITH APPLES AND CRANBERRIES

Leftover rotisserie chicken, apples, celery, and dried cranberries in a light 
and creamy dressing,this easy healthy chicken salad with apples and cranberries 
is a lunchtime favorite.

Serves: 4

 

2 1/2 cups chopped cooked chicken

3 stalks celery, chopped

1 cup chopped apple (about 1 large; I used a Pink Lady and kept the peel 
because it was organic)

1/4 cup dried cranberries

1/2 cup nonfat plain Greek yogurt

2 Tbsp Hellman’s light mayonnaise

2 tsp lemon juice

2 Tbsp chopped parsley (optional)

Salt and pepper to taste

 

Place the chicken, celery, apple and cranberries in a bowl and stir to combine.

 

In a small bowl, stir together the yogurt, mayonnaise and lemon juice.

 

Add to the chicken mixture and stir to mix well.

 

Stir in the parsley if desired.

 

Season to taste with salt and pepper.

CHICKEN SALAD

 

2 (10 ounce) cans chicken chunks, drained 

1 cup seedless green grapes, halved 

 1/2 cup chopped pecans 

 1/2 cup chopped celery

1 (11 ounce) can mandarin oranges, drained 

 3/4 cup creamy cucumber salad dressing 

 

 

Chicken Salad Sandwich

 

2 large cans chicken

 

1/4 cup chopped celery

 

1/4 cup red onion chopped

 

1/4 cup red grapes, sliced

 

1/8 cup pecans, chopped

 

1/2 cup of mayonnaise

 

2 T. honey mustard

 

pepper to taste

 

Chop onion, celery, grapes and pecans and set aside.  Drain chicken and put
into a large bowl  and combine mayonnaise, mustard and pepper and stir till
well blended. Stir in the onions, grapes, celery and pecans. Chill before
serving.

 

 

 

Ingredients

.1/2 cup mayonnaise

.2 tablespoons sour cream

.1 tablespoon lemon juice

.1/8 teaspoon salt

.1/8 teaspoon pepper

.4 cups shredded rotisserie chicken

.1-1/4 cups Grapes, halved

Directions

.In a large bowl, combine the first five ingredients. Add the chicken,

grapes, pecans, celery and, if desired, onion; mix lightly to coat.

Serve on romaine. 

 

 

 

DIRECTIONS

In a salad bowl combine the chicken, grapes, pecans/almonds, celery, oranges
and salad dressing. Toss to coat and serve!

Chicken Salad Sandwich with Havarti Cheese
1/4 cup sour cream
1/2 cup mayonnaise
1 tablespoon lime juice
1/2 teaspoon red curry paste
1 teaspoon fresh basil, chopped
2 cups cooked chicken, diced
1/4 cup sweet onion, finely diced
1/2 cup green apple, diced
1/4 cup sliced almonds
Salt and pepper, to taste
6 croissants
6 leaves butter or Boston lettuce
4 ounces Wisconsin Havarti, sliced*
1.In a medium bowl, whisk together sour cream, mayonnaise, lime juice, red 
curry paste and basil until well blended.
2.Add chicken, onion, apple and almonds; season with salt and pepper; mix 
well. Refrigerate until ready to use.
3.Split croissants. Place lettuce, chicken salad and Wisconsin Havarti 
cheese on the bottom half of croissant. Place second half on top.
Makes 6 servings.

Hi All,

If I need to make 12 to 15 pounds of chicken salad, how many pounds of chicken 
breasts will I need?
I volunteered to make some, for a school function, but I had no idea they would 
want that much.
Help!

I use chicken breast, eggs, mayonaise, green pepper  possibly onion, in the 
salad

wow, that's a lot of chicken salad.  LOL

All Recipes has a recipe finder and you can adjust the quantities for how 
ever many people you think you'll need to serve.


I just did a search for chicken salad and it brought up a ton of variations.

I'm sorry I can't tell you how many pounds of chicken to use.  But whatever 
you do, add some fresh dill.  It will do wonders for the recipe.  In grocery 
stores you can buy little containers with just a few sprigs of fresh dill in 
them.  One of those chopped fine would be great!

Okay,
There has to be at least as many chicken salad recipes as there are 
ways to boil eggs.

Let's have them...
Post your  chicken salad recipe...
Mine is kind of easy...
3 to 4 boneless skinless chicken breasts
one boiled egg per chicken breast
Mayo I add to taste...I don't like mine really soggy, just damp!
I start with a quarter cup of real mayo and two tablespoons of yellow 
or brown mustard.

If it is too dry, I will add more mayo a table spoon at a time.
Now for the crunchy...
pickles diced up and or celery.
Salt and pepper to taste

sometimes I will add a little red pepper or horseradish, just a little bit.
I also added a can of rotel tomatoes for a little spice.
the diced tomatoes with garlic and basil added (drained) also gives 
chicken salad a nice little variation.


Anyway, what is your chicken recipe look like?

okay, here's mine.  I use a combination of white and dark meat, it just 
makes it moister.  I usually use two large boneless skinless breasts and 
three boneless skinless thighs.  Boil them, let them cool in the liquid you 
cooked them in, it locks in the moisture, shred the meat.  Add enough 
Helmans mayo to get it moist, not mushy.  Add finely diced onion, and I mean 
finely diced and then Lawery's seasoning salt to taste.  The best way to do 
this is to do it the night before, and then the next day, taste it.  It may 
need more mayo  and or more seasoning salt.  Remember, you can always add 
more, but if it is too salty or mushy, you can't take it out again.  This is 
a rich chicken salad and is great on croissants or stuffed in big ripe 
tomatoes.
